It looks great, but it's the consistency (and stickiness) of marshmallow goop . . . or is that the way it's supposed to be?

It sounds like you might have over beat it. It should be light and airy, glossy and it does resemble marshmallow cream but should be lighter and airy. I use this on my coconut cakes and it is wonderful. Also, did you use a candy thermo. to cook your syrup that is poured into the egg whites? It is important to have the right temp. Try it again because it's really good when it turns out right!
