I have cucumbers growing in my backyard and they've turned out to be very bitter. Does anyone have a good pickle recipe or something that would save these cucumbers?

To take the bitter out of a cucumber, even out of a very very bitter cucumber, slice a thin piece off stem end of the cucumber and rub back and forth briskly, slice agianst sliced end, just for a few seconds. You can repeat with the other end. Then just peel and slice. You will usually see a foamy substance when you rub, just cut a small slice off before you use the rest of the cucumber. I was amazed when I was taught this little trick.

Bitter cucumbers arise when the parent plants have been stressed during growth -- usually they have been too dry -- and a bitter chemical, cucurbitacin, normally present in the stems and leaves of the plant, begins to permeate the fruit as well. It's most highly concentrated at the stem end of the fruit, rather than at the blossom end, and in the skin and the darker hued flesh immediately beneath the skin.

Cut the end(s) off and peel the cucumber, removing all the darker hued flesh mentioned, and then slice and taste. You should be fine with them now. If still bitter, your cues have got it bad and the compost heap is the only place for them.

There's no point in pickling them, because without the skin, the pickling brine would make the remaining flesh collapse, and with the skin they would be inedible: no amount of pickling will mask the cucurbitacin for you.

Once your plants are producing bitter fruit, they will usually continue to do so for the rest of their lifespan that season.

There is not any effective value of bitter cucumber. Cucumber gets bitter from lacking of water. Its as like as a sweet cucumber but differ in tests.

DILL PICKLES

1 quart vinegar
1 1/2 - 2 quarts water
3/4 cup pickling salt
1-2 heads of dill per quart
1 clove garlic (per jar)
1 hot red pepper (per jar)

Bring vinegar, water and salt to a boil.
Wash cucumbers well in running cold water. Discard any with bruised skins.

Wash and sterilize jars and rings before use. Bring lids to a simmer for 1 minute in a small saucepan.

To each jar which has been well-packed with cucumbers, add 1 clove garlic and 1 red pepper.

Pour boiling hot vinegar solution over cucumbers in jars. Seal. Process in boiling water bath 5 minutes.

BREAD AND BUTTER PICKLES

6 large cucumbers, sliced
4 onions, sliced
1/4 cup salt
1 pint white vinegar
3/4 cup sugar
1 teaspoon celery seed
1 teaspoon mustard seed

Use fresh cucumbers; wash and slice. Slice onions. Mix vegetables with salt and let stand 1 hour.

Drain and rinse with 2 cups cold water. Combine vinegar, sugar, celery and mustard seeds and heat to boiling. Cook 3 minutes.

Pack vegetables into jars, add hot vinegar mixture, leaving 1/4" headspace. Seal at once and process in boiling water bath for 10 minutes.

Cool and store.

EASY HOMEMADE PICKLES

7 c. sliced cucumbers
2 c. sliced onions
1 c. vinegar
2 c. sugar
2 tbsp. Kosher coarse salt
2 tsp. celery seed

Combine vinegar, sugar, salt and celery seed in a medium saucepan; bring to a boil. Pour over sliced vegetables; cover and refrigerate. Keeps for at least 6 months in the refrigerator.

Try this recipe

Slice cucumbers
sliced onion
2 tablespoons mayo
2 tablespoons sour cream
1 teaspoon vinegar
1 tablespoon sugar
1/2 teaspoon salt
1/4 teaspoon pepper

mix together
chill for at least an hour

goes great with any meal.
