I have a great recipe for chinese noodle cookies that you can make with chocolate chips or butterscotch chips. It's quick, easy and a family favorite. All you need is one pkg. semi sweet chocolate chips, milk chocolate, or butterscotch chips, 1 can of crunchy chow mein noodles and half of a c. chunky peanut butter (I use Skippy). Melt the peanut butter and chips over low heat in a medium sauce pan be careful not to burn. When they are melted take off the stove and add the noodles. On a piece of wax paper drop by spoonfuls and top with half of a candied cherry. They will be a favorite everywhere you take them. I make the butterscotch version every christmas and use red and green cherries on top. They are the first cookie to go. YUM!

You can vary this candy recipe by using milk chocolate, vanilla milk chips or dark chocolate. Also try different types of nuts. The only really crucial ingredient is the crisp fried chow mein noodles.
INGREDIENTS:
2 cups semisweet chocolate chips
1/2 cup milk chocolate chips
1 cup chopped cashews
1 cup chow mein noodles
PREPARATION:
Melt chocolate chips in microwave or over very low heat in saucepan. Stir in cashews and chow mein noodles until coated. Drop by teaspoons onto waxed paper and let sit until set. About 36 candies

They are called Haystacks. You use butterscotch chips, chocolate chips, a little butter and melt. Stir in chow mein noodles and peanuts and drop on wax paper. Let cool and enjoy! At Christmas I put these in decorative tins and give to neighbors and friends.

CHOCOLATE PEANUT BUTTER HAYSTACKS
1 (12 oz.) pkg. semi-sweet chocolate chips
1 (12 oz.) pkg. peanut butter chips
2 (5 oz.) cans chow mein noodles
3/4 c. peanuts
Melt chocolate and peanut butter chips in a heavy saucepan over low heat and quickly stir in noodles and peanuts to coat evenly. Drop by teaspoonfuls onto waxed paper. Refrigerate. Makes 30.

I've seen the chow mein noodles covered in melted butterscotch chips... melt chips, stir well to coat noodles, then drop onto foil-lined pans to harden.
