Chop a few slices of bacon into small pieces, they fry in a non-coated pan. Remove the bacon and drain, and pour off all excess grease, but leave on the little brown bits. Add a little onion and garlic and saute until browned. Now deglaze your pan by pouring a few tablespoons of liquid in (like vinegar, chicken broth, wine, or just water) and scraping the bottom of the pan to loosen. Add your well rinsed swiss chard and cook until wilted. Then add your bacon back to the pan, and top with slivered almonds and some parmesan cheese.

Swiss chard is too tough to eat raw. You've got to cook it for at least 10 mins to soften it up. Here's an easy recipe I've made several times using the Swiss chard from my garden. Me and my husband love it. You can use the stems too, just cut off the very ends.

1 1/2 T butter
1 1/2 T olive oil
2 garlic cloves, pressed or finely chopped
Pinch of dried crushed red pepper
2 large bunches Swiss chard, chopped

Melt butter with oil in heavy large pot over medium-low heat. Add garlic and crushed red pepper. Saute until fragrant, about 1 minute. Add chard; stir to coat. Cover; cook until tender, stirring occasionally, about 8 minutes. Season to taste with salt. Serve immediately. Makes 4 servings.

You can also use it for cabbage rolls. I used to grow it and there was uaually lots so that's what I did and froze them. They are a lot easier to make with chard that fighting to get those blasted cabbage leaves off. They have a bit of a different taste but if you like chard anyway you are ahead of the game.

I like to boil in in chicken broth for about 10 mins...then drain the liquid out and put into a skillet with olive oil and crushed garlic....saute for 2-4 mins and sprinkle Parmesan cheese on top. Best way to eat it!

Cook it quickly in garlic and EVOO, w/a little salt.

Use it like spinach to make a stuffing for pasta, chicken, or meatloaf.
