any suggestions would be great..like what type cheese and everything.

Ro*Tel's Famous Queso

A creamy, cheesy and spicy dip made with just 2 ingredients--a Ro*Tel signature recipe!

Cooking Method: Boil-Simmer
Prep Time: 10
Cooking Time: Up to 10 minutes

Makes: 2-1/2 cups or 20 servings (2 tablespoons each)

Ingredients

1 can (10 ounces) Ro*Tel® Original Diced Tomatoes and Green Chilies, undrained
1 package (16 ounces) Velveeta® Pasteurized Prepared Cheese Product, cubed

Directions
Combine tomatoes with their liquid and the Velveeta in medium saucepan.
Cook over medium heat 5 minutes, or until Velveeta is completely melted and mixture is well blended, stirring frequently.
Serve warm as a dip with tortilla chips or crackers. Velveeta is a registered trademark of Kraft Foods Holdings, Inc.

Ive always made a salsa using rotel (in case you are wondering rotel is sold at the store in 8oz cans usuall with the canded tomatoes) i like mine more like pico de giou i chop a fresh onion cut a fresh tomato in to abot half inch pieces add fresh hot pepper then stir in rotel make as thick or asjuicy as you want by the amount you add soice to flaver make sure you have a bag of chips handy for testing

I use Velvetta or Borden velvetta (its a little bit less expense) : You can cut up a pound or pound and a half of the velvetta into cubes and put either in a glass casserole dish along with a the Rol-tel (even Target brand is great and less expensive) mircowave about 2 minutes stir and repeat until all velvetta is melted, or you can cook it in a Crock-pot (which keeps it hot especially nice for guest or parties)

1lb of Velveeta (1/2 the big box) cut into large chunks or cubes
1 Can Ro-tel diced tomatoes and green chiles
(Make sure and get diced so you can just pour them right out of the can)
Microwave in a casserole type dish... start with about 4 minutes and stir... then about 2-3 minutes more

Great with veggies as well as tostitos or big scoop fritos

i make mine with a velveeta-like cheese loaf. Melt as much cheese as desired in microwave...add small amount of milk to thin. I then put the rotel tomatoes in (no juice)..as many as you prefer. My lil extra pizazz is chopped jalepeno peppers added! A lot of people will also add cooked ground beef or sausage but i don't care for that so much!

If you have access to Sam's use their can cheese, if not use velveeta.

Use 1 part ro-tel to 4 parts cheese
Some people add hamburger

Take one lb of Velveta to one 16oz can rotel. Cube velveta into a microwave safe dish, add rotel, microwave till velveta is melted. Stri frequently during microwaving. Serve with chips or crackers.

Add a pound of browned, drained ground beef to the recipes already provided here, and you make the dip EVEN better! Delicious with tortilla chips. Guys love this stuff. Now I want to make some!

Melt some velveeta cheese and add a can of rotel tomatoes!!! (About half of one of those big boxes of cheese)
