Try:
Sweet Potato Pancakes
1 pound sweet potatoes, peeled
1/2 cup all-purpose flour
1 teaspoon baking powder
2 teaspoons white sugar
1 teaspoon brown sugar
2 teaspoons curry powder
1 teaspoon ground cumin
2 eggs, beaten
1/2 cup vegetable oil for frying
1/2 cup milk
DIRECTIONS
Shred the sweet potatoes, and place in a colander to drain for about 10 minutes. In a large bowl, stir together the flour, baking powder, white sugar, brown sugar, curry powder and cumin. Make a well in the center, and pour in eggs and milk. Stir until all of the dry ingredients have been absorbed. Stir in sweet potatoes.
Heat oil in a large skillet over medium-high heat. Drop the potato mixture by spoonfuls into the oil, and flatten with the back of the spoon. Fry until golden on both sides, flipping only once. If they are browning too fast, reduce the heat to medium. Remove from the oil, and keep warm while the other pancakes are frying.

You can omit the curry and cumin and sub coco powder and chocolate chips for a real treat, you can also add dried fruit, nuts or any number of things I find potato types far more helpful to balance the added ingredients then the traditional flour type.

1 cup milk
1 egg
2 tablespoons butter or margarine, melted
1 cup all-purpose flour
1/3 cup unsweetened cocoa powder
1/4 cup sugar
1/2 teaspoon baking soda
1/2 teaspoon salt

1. In a small bowl, combine milk, egg and butter; whisk until blended.
2. In another bowl, combine flour, cocoa powder, sugar, baking soda and salt; mix well.
3. Add milk mixture; whisk just until dry ingredients are moistened. (Batter will be slightly lumpy.)
4. Heat griddle over medium heat until hot. (Drops of water will sizzle, then evaporate.)
5. For each pancake, pour scant 1/4 cup batter into griddle.
6. Cook 1-2 minutes or until batter is set around edges.
7. Carefully turn over pancake; cook 1-2 minutes or until pancakes are cooked through.
8. Repeat with remaining batter.
9. Sprinkle pancakes with powdered sugar; serve warm with desired toppings.

Try the following

Chocolate pancakes with chestnut cream and chocolate sauce

Pancakes:
110g/4oz plain flour
25g/1oz cocoa
1 egg
300ml/½ pint milk
Chestnut cream:
200g/7oz fresh chestnuts, peeled and liquidised
175ml/6fl oz whipping cream
1 tbsp caster sugar
a few drops of vanilla essence
Chocolate sauce:
200g/7oz plain chocolate
150ml/5fl oz water
2 tbsp brandy or rum
25g/1oz sugar
25g/1oz butter

Method
1. To make pancake batter, sift flour and cocoa, make hole in the centre, drop in the egg and slowly whisk in the milk until smooth and pouring consistency, leave to stand.
2. Make chestnut cream by carefully mixing cream and caster sugar into prepared chestnuts. Flavour with vanilla essence.
3. Make chocolate sauce, bring to the boil the chocolate, water, alcohol and sugar. Stirring all the time, turn the heat down and simmer for 5 minutes. Remove from heat, add butter. Leave to one side.
4. Make pancakes, put a small drop of oil into a small frying pan until it smokes then pour in a small ladle full of batter. When set turn over. Turn onto a plate and fill with chestnut cream, pour over chocolate sauce and serve.

2 cups flour
3 teaspoons baking powder
1/2 teaspoon salt
1 cup sugar (less may be used, to taste)
1 cup milk
4 teaspoon butter, melted
2 eggs
4-6 teaspoons cocoa

Combine dry ingredients. Add remaining ingredients and stir only until mixed.

These freeze well and can be reheated in the microwave for a quick breakfast.

Sauce (frosting):

1/2 cup butter, melted
1 1/2 cups powdered sugar
1 teaspoon vanilla

Mix well. Spread on hot pancakes.

Chocolate Pancakes

1 1/2 teaspoons cocoa
1/4 teaspoon baking powder
1/4 teaspoon salt
1 teaspoon oil
1 egg white
1/4 cup skim milk
1/4 teaspoon vanilla

Sift together dry ingredients.
Mix in wet ingredients.
Drop tbsp onto griddle until each side is browned

yep Ive made those all you do is ad choc chips to the batter also you should try banana and walnut pancakes another fave of mine is add bananas and the cinnamon apple flavor applesauce yum yum

those recipes are great just want to add do not overmix and let the mix stand overnight.
