As something a little different from the usual refried beans and rice, how about a good corn-bean salad?

3/4 cup sugar
3/4 cup cider vinegar
1/2 cup Canola oil
1 tablespoon water
1 teaspoon pepper
1/2 teaspoon salt, or to taste
2 cups corn kernels, fresh, frozen and thawed, or canned and drained
2 Cups canned black beans, drained
1 cup chopped sweet or mild onion
1 cup chopped bell pepper, green or red, or combination

PREPARATION:

Combine first 6 ingredients in a saucepan and bring to boil; remove from heat. Cool. Combine remaining ingredients in a medium bowl; pour dressing mixture over and toss gently.

Cover and chill for 4 hours or more. Serves 6.

I serve them on their own but you could serve a
Watermelon Salad:
3/4 cup halved, thinly sliced red onion
1 tablespoon fresh lime juice
1 1/2 quarts seeded, cubed watermelon
3/4 cup crumbled feta cheese
1/2 cup pitted black olive halves
1 cup chopped fresh mint
2 tablespoons olive oil
DIRECTIONS
Place the onion slices in a small bowl with the lime juice. The acid of the lime will mellow the flavor of the raw onion. Let stand for 10 minutes.
In a large bowl, combine the watermelon cubes, feta cheese, black olives, onions with the lime juice, and mint. Drizzle olive oil over it all, and toss to blend. Dig in and be prepared for a pleasant surprise!

Bacon and Black Bean Smash

1 tablespoon extra-virgin olive oil, 1 turn of the pan
3 slices bacon, chopped
1 onion, finely chopped
2 cloves garlic, chopped
1 jalapeno, seeded and chopped
2 cans black beans, drained
Salt and pepper
1 tablespoon ground cumin
1 to 2 teaspoons hot sauce
2 to 3 tablespoons chopped cilantro leaves or scallions, optional garnish
Sour cream, optional garnish

Heat a medium skillet over medium high heat. Add extra-virgin olive oil and bacon. Render fat 2 minutes then add onion and garlic, cook 5 minutes. Add 1 can of beans to the pan and season them with salt, pepper and cumin then smash them with a potato masher, combining them with bacon and onions. When they are combined, add remaining can of beans and combine with smashed beans. Add hot sauce to your taste and serve. Chopped cilantro or scallions and sour cream are optional garnishes to this smash.

Jicama Slaw

1 large jicama, peeled and finely shredded
1/2 Napa cabbage, finely shredded
2 carrots, shredded
1/2 cup freshly squeezed lime juice
2 tablespoons rice vinegar
2 tablespoons ancho chili powder
2 tablespoons honey
1/2 cup canola oil
Salt and freshly ground black pepper
1/4 cup finely chopped cilantro leaves

Place jicama, cabbage, and carrots in a large bowl. Whisk together the lime juice, vinegar, ancho powder, honey, and oil in a medium bowl. Season with salt and pepper, to taste. Pour the dressing over the jicama mixture and toss to coat well. Fold in the cilantro. Let stand at room temperature for 15 minutes before serving.

spanish rice, because you can actually put some in the fajitas and it will be good.

I say black beans (not refried) and some rice - though I would prefer just the black beans with a little queso fresco cheese sprinkled on it! mmmm
