What about home fries? Hash browns? Mash them with some cream cheese and horseradish. Toss them in butter and chives. Baked with sour cream and butter.

here's a great one.................sounds like a lot of work, but it's actually quite easy.
lay the potato lengthwise in front of you, place a chopstick in front & one in back of potato (also lengthwise) these act as guides. Now, take a knife & make cuts down to the chopsticks. Go the length of the potato, you should be able to make 20-30 cuts about a 16th of an inch apart. chop some parsley, mix with a little thyme, salt & pepper. drizzle the top of the potato with melted butter or olive oil, sprinkle the herbs over the top, pulling the slices apart slightly to let the herbs get in between, you could even push a little grated or shredded cheese in there. Place in a pan with a little chicken stock, cover & bake at 350 for 45 mins. remove foil & bake for another 15 mins to brown the top. nice presentation, fairly easy, tastes great.

try a potato based dish like shepard's pie or make some baked fries way less fattening and yummy

my shepard's pie: make your mashed potatos however you like them (eveyone has thier own special recipe... i know) and cook up some ground turkey and some niblet corn (separate pans) i roast garlic and add to the poatoes when they are fully mixed and mashed. you can add whatever you want. In a deep baking dish lay down half of the potatoes and spread evenly. now add a layer of all of the ground turkey. now mix the corn and remaining mashed potatoes together and layer above the turkey. now you add a thick layer of shredded cheddar cheese and bake at 300 for about 20 min or until the cheese is fully melted and slighty browning to give it some crispiness. and there you have a good yummy use of your potatoes and a whole meal at that!

Pommes Anna...A delicious recipe & a great alternative to scalloped.
2 to 3pounds Idaho potatoes, peeled
1/2 pound butter
Salt and pepper
Preheat oven to 400 degrees.
Heat an 8-inch non-stick skillet with a cup of butter.
Slice the potatoes in very thin rounds, dry potatoes with a clean cloth.
Starting from the center of the pan, overlapping slightly, place slices in a spiral going clock-wise.
Repeat another spiral counter clock-wise.
Sprinkle with salt and pepper.
Drizzle with butter and quickly, repeat process of layering, seasoning and drizzling, until the potato cake is about 2 inches high.
Shake pan lightly to keep bottom from sticking.
Place in oven to finish for 20 minutes. Use the remaining potatoes and butter in the same manner in another skillet. Test center of Pommes Anna for tenderness.
Pour excess butter into a pot for future use.
Remove from pan, drain on paper towel and cut into wedges.

Only consider this if you are a garlic lover-
Dice potatoes. If you have a deep fryer, fly potatoes until about half done. If not coat with olive oil, place on a baking sheet and place in oven at 400.
Either way, when the potatoes are about half done, add several dozen cloves of garlic, cut in half. Sprinkle garlic and potatoes with salt and pepper and back at 300 until potatoes are crispy outside and soft in the middle.
My family loves this one with steak. Be forewarned however, you will have garlic breath!

Cut your potatoes into like one inch pieces. mix into a boil a half a cup of vege oil, about three table spouns of italian seasoning a 1/4 of a teaspoon of garlic and a half teaspoon of sugar. mix together and add the potatoes then spread them out on a baking sheet and bake them in a 350' oven until they a golden brown and kind of crispy. Ok take a cookie sheet and spray it with cooking oil, then put in some olive oil on the bottom and make sure its covered. Cut some potatos into cubes, or whatever sliced shape you like.....cover them with some garlic powder, salt and pepper and then put them in the oven for 45 min. .....close to when they are finished add some red pepper powder if you like to add a kick.....
They are kind of like home fries, but really crispy.

Cottage fries (that's what we call them) just peel and slice the potatoes thin, spice them up a bit, heat up Oil in a deep fry pan and toss them in til they brown up.

Oven home fries with peppers and onion
2 1/2 pounds red skinned potatoes
3 tablespoons extra-virgin olive oil
1 green bell pepper, seeded and chopped
1 medium onion, chopped
1 tablespoon grill seasoning (recommended: McCormick's Montreal Steak Seasoning)
2 teaspoons sweet paprika
Preheat oven to 500 degrees F.
Coarsely chop potatoes and transfer to a nonstick cookie sheet. Toss with oil, peppers, onions and seasonings and place in the oven 25 minutes, turning twice with spatula. Serve hot.

OLD FASHIONED POTATO
PANCAKE
Peel 4 or 5 potatoes, cut up and put in blender and grate. Or to do the old fashion way, grate with a hand grater. Add 1 egg, salt and pepper to taste and enough flour to thicken to a good pancake batter. Add chopped onion if desired. Cook on well buttered hot pan, turning over once. Good for breakfast or as a side dish with dinner. Top with plenty of butter.

scalloped potatoes don't have cheese, augrotin do! I'd go with the scalloped or fried potato's with onions, french fries, baked, they all sound good to me!

gratin is like scallpoed, but no cheese. very good.
Potatoes Gratin
2 pounds baking potatoes, peeled and sliced paper-thin
2 cups heavy cream
2 garlic cloves, split
Leaves from 4 fresh thyme sprigs
3 tablespoons chopped fresh chives, plus more for garnish
1 cup grated Parmigiano-Reggiano
Sea salt and freshly ground black pepper
Preheat the oven to 375 degrees F. In a large bowl combine all the ingredients, tossing to coat. Season with salt and pepper. Put the potato mixture into a casserole dish, flatten it out with a spatula, and bake for 40 minutes, until the potatoes are tender and the gratin is bubbly. Let stand for 10 minutes before serving. Garnish with fresh chives.

Preheat oven to 500 degrees F. Cut potatoes into thin wedges and place on a cookie sheet. Coat potatoes in a thin layer of evoo, then sprinkle very liberally with 2 palm fulls of herbes. Toss potatoes to coat evenly. Roast potatoes 25 minutes, until crisp and golden at edges. Season hot wedges with salt to your taste
