Fofo - Fufu Recipe

20 min
900 ml boiling water (1 1/2 pt)
90 g potato flour (3 oz)
200 ml water, Cold (7 oz)
1 packet potato flakes (180 g/6 oz)

Warm a medium saucepan with 200 mL (7 oz) of the boiling water.
In a small jug blend the potato flour with the 200 mL (7 oz) of lukewarm water (mixing some of the boiling water with part of the cold water; the water must not be hot or it will cook the starch to form a creamy mixture. Empty the water from the warmed saucepan.
Pour the potato flakes into the saucepan and add the remaining boiling water, enough to fully cover the potato flakes.
Do not stir yet. Using a wooden spoon , stir the potato flour mixture in the jug and quickly add this to the saucepan.
Speed is of the essence here, as is dexterity! Stir the 2 mixtures together vigorously, pulling the dough in from the centre against the inside of the saucepan with one hand and gripping the pan firmly with the other.
When the dough is firm and smooth, moisten a small bowl with small quantities of the cold water and scoop the dough into this bowl, either as one large ball or individual balls, and serve with soup.

INGREDIENTS

* 4 yucca (cassava) roots, peeled and sliced
* 5 yellow plantains
* 1/2 cup butter

DIRECTIONS

1. Place the cassava and plantains (with peels on) into a large pot, and fill with enough water to cover. Bring to a boil, and cook until cassava is soft, about 30 minutes; drain. Remove and discard peels from plantains, and return them to the pot. Mash with butter, then beat with an electric mixer until smooth. Use as much butter as needed to get the mixture moist enough to mix

Tofu is super easy and versatile you can add firm tofu cubes to top ramen vegetable noodles with 1/4 cup frozen mixed veggies, or you can cube firm tofu and mix into a salad as you would chunks of cheese (use a sesame dressing for best flavor), or add the cubes to canned veggie chili for a good balance of texture and flavor. For a nice dessert you can puree 1 cup strawberries and 1 container extra smooth (silken) tofu and 1/2 cup orange juice (taste and adjust for sweetness as you prefer) then freeze in a tightly closed container for 3 + hours and enjoy as you would any sorbet or ice cream.

Tofu is a very versatile food and with a little practice and a lot of imagination you will soon find you can make any number of your favorite dishes with tofu. Good Luck!
