Hamburger Pie
I always double this recipe but I use 2 1/2 pounds of hamburger, one egg in the potatoes.
1# ground beef
1/2 c. chopped onion
2- 16oz cut green beans, drained
1- 10 3/4 oz condensed tomato soup
1/4c. of water
salt and pepper to taste
3-4 med potatoes, peeled and quartered
1 beaten egg
milk
1/2 c. shredded chedder cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in beans, soup, water and season with salt and pepper.
Place mixture in a pan.
Cook potatoes in salted boiling water about 20 min or until tender; drain. mash while hot; stir in egg. Add enough milk to make potatoes fluffy, yet stiff enough to hold their shape. Season with salt and pepper.
spread potatoes on top of meat mixture. Sprinkle with cheese.
Bake, uncovered, in a 350 degree oven for 25-30 minutes.
makes 4-6 servings (Can use instant potatoes. Make according to package but omit the butter. (Remember: NO BUTTER to the mashed potatoes)

Simple Shepherd's Pie
1# hamburger
chopped onion (optional)
cream of celery
1/4 c. milk
1/2 stick melted butter
16 oz. bag of mixed vegetables
3-4 medium potatoes, peeled and quartered
1 beaten egg
milk for mashed potatoes
(Can use instant potatoes. Make according to package but omit the butter. Remember: NO BUTTER to the mashed potatoes)
Cheddar cheese
Cook hamburger and onion till meat is browned and onion is tender; drain off grease.
Stir in vegetables, soup, 1/4 c. milk, melted butter and season with salt and pepper.
Bake, uncovered, in a 350 degree oven for 30-40 minutes.
makes 4-6 servings
If you want to shorten the recipe to about 25-30 minutes, then cook your mixed vegetables and then add to hamburger mixture.
Edit: You can substitute cream of mushroom for the cream of celery. But the cream of celery compliments the mixed vegetables.

My family loves this one...I call it cornbread casserole

1 lb ground beef, cooked
1 can green chilis, chopped
1 can cream of corn
1 box jiffy cornbread mix, dry NOT mixed as instructed
6 cheese slices

Spray a 9x13 inch casserole dish. Preheat oven to 350.

I like to make little meatballs with onions and mushrooms in a nice brown gravy and serve over rice.
Add a salad and some crusty bread and you have a great meal.
Enjoy!
