I'm selling my 2002 VW Jetta 1.8T w/ exhaust and cold air intake, and it's eating away at me. I need to for financial reasons in starting a family, but I can only afford up to a $3000 car. This might be a matter of opinion, but I would like something that throws you back in your seat with acceleration, and a decent track record.
I've considered a Saab 900, Subaru, older Mustang, but need suggestions.

I'll be driving it to and from school, and work. My work fortunately is only two blocks away, and school is about 7 miles by freeway. I also have a buddy I visit a couple times a month. My wife has an 04 Honda Civic, and our child is 2 and a half. This won't be much more than a commuter car for myself.

If you are getting rid of your car for financial reasons. Why would the Saab, or Subaru be in you list? Both cars are expensive to maintain...
If you are looking for a solid car with decent power that will last you a long time look at almost any GM car with a 3.8L V6 that would be a smart way to go..

Uhm...you're thinking of starting a family and would like "something that throws you back in your seat with acceleration?!" For the sake of a future new baby, I sincerely hope that you are not doing the driving...no offense, but a baby in the backseat is serious business...they deserve a safe, gentle ride in the car. I tend to have a lead foot...but never with my son in the car. My driving habits changed on the day that I brought my son home from the hospital.
Now, my opinion on the car...definitely forget the Saab if you are thinking cheaper in the long run. I owned one, and it was definitely a "sob" story--expensive parts and problems because it was a turbo. Forget the Mustang, too...not a family car. That's bachelor territory. Subaru? Perhaps. Not sure about the cost of the parts, but I have a friend who owns a Forester and raves about it. He is a musician and loves the clever ways that the seats fold flat for all of his heavy, bulky equipment. He also recently got married, and his car works well for the family (he married a divorced single mother). His Forester has surprising pep and acceleration, too. This is definitely NOT your mother's station wagon from the 80s (or, maybe, make that your grandmother...) :-) I am sure that it costs more than $3,000, but maybe you can find it used.
How about a Hyundai? I have heard good things about their warrenties, and I think that they are underated for their performance as a compact or mid-size sedan. No idea about how expensive or cheap their parts are, but I have heard that they are fairly fuel efficient. Hondas are famous for their cheaper parts, fuel efficiency, and resell value but you might find them priced higher due to their popularity in the used car market.
As for me...I am saving for a Toyota Prius when my '88 Volvo bites the dust. I am sick of filling up every week at the pump! Plus, if I am going to spend my hard-earned money on another car, why add one more gas-belching car to our roads? Just a thought...think about it...

Ok ok first of all! Throws you back in your seat? Your gonna have a family, what do you want to do give your child baby shaking syndrome? I would find something that is safe and dependable for 3,000 dollars first. then find somthing that will work well with your job. do you know how hard its gonna be to put a car seat in a older mustang? Priorties with a family arent they a b**** but its the screwin you get for the screwin you got lol. ok enough jokes did you try autotrader.com or beepbeep.com maybe even carsoup.com Saturns pack a good punch! they have 4 doors for the baby, and they are affordable, so are the parts if needed! GOOD LUCK!

That is a tall order. Something that will slam you in the back of the seat for 3K?? I hope you find it. I would go with the older Mustang GT. There are a bunch of them on the road, so finding used parts may be easier. good luck..

You should look at something like a pontiac Grand prix or buick regal with the 3800 V6. They have good room and reliability for a growing family but also have some good power behind them.

Well for starting a family the mustang is not a good choice, it's bad in rain and snow, and i love the car but just not for family. The Subaru, AWD is your best bet in that category.
