I have a kayak that came from Gander Mountain. If you have one of these stores near you, at least go talk to them. No offense to Sam's, but they know how to sell 50 lbs. of granola, or 5 gallon jugs of laundry detergent.
The kayak I have is called an OT Rush. It's a plastic sit-inside kayak made by Old Town. It's a basic, more entry-level kayak, but for what I need, it's great. It's light enough to put it up on top of the car, it's roomy enough to take a backpack or other small gear bag (or maybe 2) for a day trip, and it is really, really tough. I've scraped across rocks, gravel, sand, etc with no problems.
I recommend Gander Mountain because that's where my wife got it. She talked with their sales rep, and described how I'd use it, my build, etc, and he picked out this one. I think he did a great job, probably because he knows about what each boat can do, and what's it's designed to do.
One other tip - my wife got it for me for my birthday when Gander Mountain was getting rid of summer merchandise. She got it on sale, and applied for a Gander Mountain credit card to pay for it. That qualified for an additional discount. She paid off the bill when it came in, cancelled the card, and saved some extra cash.

Also, for $385 for boat, paddle and a life jacket, this REI deal is comparable, and I love the Prodigy 10 ft. boat, which I do own. Great for paddling through rivers of cow dung in the country, and raw people sewage here in town!

A side note: when possible, avoid Wal-Mart/Sam's Club if you are in any way pro small 21st-century American business. I know they are cheap, and sure I break down and get some stuff from them every now and then, but they really do hurt consumers in the long run. As for a kayak, can your average wal-mart customer even fit in one? What's the max capacity on that yak? Must come equipped with extra large cup holders and a place to stash Arby's. But I digress, rant over.
