You might want to check out who is playing at the Beacon Theater on the Upper Westside, it's not that big a theater, but they get some great groups up there. Also, don't know if you are into Jazz, but I've heard that the Jazz club at the Times Warner building is really quite great and something different. It's pretty new, but a few friends have been over there and really enjoyed it.
If you want to take him out for a wonderful meal that by New york standards is not all that expensive, that is for a top restaurant, and is one of my favorites, and I've eaten at some of the best, give Capsuto Freres on Watts Street a try. It's french/Lebenese food, which means basically French food. They make the best souffle's I've ever had. By NY standards everyone I've taken there has been surprised by the menu, all the entrees are in the low $20, which is incredible for NY and a top restaurant that gets loads of rave reviews. It's a bit off the beaten path.
After that one of the things that you can do that is quite special, is to head over to the Meat Market and go to the top of the Gansvort Hotel. They have an incredible bar on the top of the hotel, it's one of the hottest spots in town. You get a great view of the city and get to drink sitting outside. Even though i'm a native NYer, my husband and I decided to give ourselves a vacation for a few nights at the hotel when it first opened and it was quite something.

Its nothing fancy but there is this little diner like a 50's diner that I visited when I was there. All the waiters and waitresses sing and perform. Its by the Sheraton NY Towers in Manhattan. It was sooo awesome and the food was great too.

Take him to one of the Great Steakhouses -- Keen's, BLT Steak, Michael Jordan's, etc...if you can afford to spend at least $100 for the two of you....He would also like Blue Smoke a BBQ Restaurant on e 27th. ( I am assuming he likes to eat MEAT)
PS I hate to be a snotty Manhattanite, but all the other answers are crap and mostly from tourists who don't know squat about NYC restaurants or what guys like to eat.
