"SP" = short play; the tape can record 2 hours of programming
"LP" = long play; tape can record 4 hours
"EP" = extended play; tape can record 6 hours
The more hours you try to squeeze on a tape the lower the quality will be. For example, at the sp speed the tape is spinning faster, which means longer lengths of tape on which to record data. At ep speed the tape spins slower, which means the same data is crammed into shorter tape length (and thus not all data quality is good). If you want quality recordings, use sp. If you don't care about quality and want to cram in as much as possible, use ep.

SP (standard play), LP (long play), and EP (extended play) are different compression ratios used in VHS tape recording. The data being recorded on the tape can be made to take up less room or more room by spinning the tape more quickly or more slowly. Spinning the tape more slowly allows for more video information to be stored on the tape, but decreases the quality of that information. A standard VHS tape can hold about 2 hours of SP footage, 4 hours of LP footage, or 6 hours of EP footage.

Standard Play and Extended Play - refers to the tape speed. A typical VHS cassette will hold 2 hours of recording in SP, 4 hours in EP. By slowing the tape speed (EP), you get more "hourage" per cassette at the expense of some video quality.

LP mode is rarely used anymore and not a good idea for tapes that will be played on another deck. EP is also designated as SLP on some decks. More modern decks usually set the speed from the menu, you may need an original remote control to be able to change it. You only set the speed when recording. Playback is adjusted automatically by the deck, it will even track tapes where the speed is changed mid-way through.

Most VCRs have a EP/LP/SP button to let you set which mode is being used if you are using the instant recording feature.
Or, when you program the VCR, you can set the recording speed there too.
