If you don't eat it the day you get it, or very soon the following day, you will notice a degradation in the freshness and flavor. The longer you wait, the worse it will be. Also, other ingredients like cucumber and tempura flakes get mushy/soggy rather quickly as well.

It also depends on what types you are eating. Cooked sushi rolls (eel, shrimp, crab stick in Cali. rolls) will certainly last longer (and taste better longer) than fresh raw fish. I certainly would not recommend raw fish after more than a day, and only if it was well refrigerated and did not sit out for a long time.

Sushi should be eaten the same day that you buy it. If it was made fresh that day, you can keep it overnight in a refrigerator, but I would not trust raw fish that has been left for more than 24 hrs.

Likewise, it should always be kept chilled, so if you are serving it on a patio, picnic, or some event where it will be left out for an hour or more, make sure it is in a cooler or on ice.

A bagel with smoked salmon and cream cheese could stay in the fridge 3 days and still be good. The sushi rice is vinegared, so it should be OK. The nori (seaweed) will be a bit soggy, but will still be edible. The basic discernible difference will be in the texture of the rice. The starches will change with the temperature. Let is sit out for an hour to relax the rice.

If you get it at a supermarket in a package and put it in the fridge when you get home it should last until that "SELL BY" date that is on the package.

When we get sushi it usually gone the same day so I never ran into a freshness date on that.

you shouldnt really keep it for to long or else u can catch diseases probably 2 days er so
