I suggest cooking them in a small amount of water until tender, then running them through a Foley food mill. You'll still have to stop often to remove the skins and pits, but the resulting pulp can be mixed with sugar to taste and either Fruit-Fresh or a little lemon juice to prevent discoloration and then frozen.

Not very easily! I recall my mom boiling them, seiving the stones off the top then freezing the puree. Might work??
