I make this salad all the time. Generally I use the cheddar cheese crumbles. Recently Kraft starting putting out crumbles. They aren't as good as when I go and buy them from the farmers market, but still good. I have used mozz before, but it really doesn't have enough flavor to stand up to the rest of the big flavors. I also have used parm cheese before, but it gave it a funny texture.

Shaved Parmesan Reggiano or for a lower cost Asiago works also. Try buying fresh hard parmesan, the pre-grated parmesan has other fillers in it and it does not take on a true and fresh flavor!

I like to use Asigio cheese for that type of Pasta dish. You can also dress it up with some capers!

Parmesan, fontina or romano would all be good. Yum, I love pasta salad! Some fresh basil in there would be really good too.

feta would be good, but i think just a softer, milder goat cheese would be better. it would add a mild, creamy, sweetness w/o too much rich flavor competing against the other flavors in the dish. i think this way, it makes the whole dish less in your face with salty strong flavors.

I'd toss in feta crumbles. The sun-dried tomato feta would really complement that salad.

pepperjack, any flavor of cheddar and I personally would use a smoked provolone and sprinkle some McCormick's Salad Supreme on top...

I would use a shredded Asiago it's sharp enough to add flavor but not so sharp to overwhelm.
