Chicken Casserole
6 boneless skinless chicken breasts
1 can cream of chicken soup
¾ cup water
Swiss and/or American cheese slices
Pepperidge Farm stuffing (small blue bag)
½ cup margarine
Line 13x9 pan with chicken. Mix soup and water. Pour over chicken. Cover with cheese. Pour stuffing on top. Melt margarine and pour over stuffing. Bake uncovered for 1 ½ hours at 300 degrees.
Chicken with Cheese

1 can cream of mushroom soup
1/8 cup sherry or red wine
¼ lb. grated cheddar cheese
Place chicken in baking dish. Add onions. Mix soup and sherry and pour over chicken. Sprinkle cheese on top. Place in 350 oven, COVERED, for 45 minutes. Uncover and continue baking for 35 to 45 more minutes. Salt and pepper to taste.
Pollo Don Giovanni
2 boneless skinless chicken breasts
1 - 2 T olive oil
½ cup chopped carrots
1/3 cup chopped celery
1/3 cup chopped onions
1 cup white wine
1 t chopped parsley
Salt and ground black pepper to taste
Hot cooked rice or pasta
Sauté chicken in olive oil until brown. Add carrots, celery, onions, wine and parsley. Cook until carrots are tender, chicken is done and wine is reduced to about half, about 12 to 15 minutes. Season to taste and serve over pasta or rice.

Parmesan Chicken
* 1/2 cup dijon mustard
* 1/4 cup apple juice
* 2 cloves garlic, minced
* 2 cups fresh soft bread crumbs
* 1 cup grated Parmesan cheese
* 1 Tbsp. butter, melted
* 1/4 tsp. salt
* 1/8 tsp. pepper
* 2 tsp. dried parsley flakes
* 8 boneless, skinless chicken breast halves
PREPARATION:
Line a 13x9" pan with foil and preheat oven to 375 degrees.
In shallow pan, mix mustard, apple juice, and garlic. In other pan, mix the crumbs, cheese, parsley, melted butter, salt, pepper, and parsley flakes. Coat chicken in the mustard mixture, then roll it in the crumb mixture until thoroughly coated. Place the chicken in prepared pan and bake for 20-30 minutes, until golden brown and thoroughly cooked. Serves 8

* 1/3 cup biscuit mix
* 1/4 cup grated Parmesan cheese
* 1 teaspoon dried leaf oregano
* 1 teaspoon dried leaf basil

* 1/2 teaspoon garlic powder or granular garlic
* 1 scant teaspoon salt
* 1/4 teaspoon pepper
PREPARATION:
Wash chicken; pat dry.
Preheat oven to 425°.
Put butter in a 13x9x2-inch baking pan; heat in oven until melted. Mix biscuit mix, Parmesan cheese, herbs, garlic powder, salt, and pepper in a shallow bowl or pie plate. Dip chicken breasts in mixture, coating well. Place chicken in pan. Bake for about 20 to 25 minutes, until chicken is browned and juices run clear, turning once to brown evenly.
Serves 4 to 6.

Chicken Alfredo 1-1/2 pounds chicken strips or tenders 1 1/3 cups French's French-Fried Onions 1 12 ounce jar Alfredo sauce, or substitute 1 can of Campbell's. Condensed Cream of Chicken Soup and 1/2 cup grated Parmesan cheese or use homemade (recipe follows) 1 cup milk 1 cup frozen peas, thawed 2 tablespoons bacon bits Hot cooked pasta Heat 1 tablespoon oil in large nonstick skillet until hot. Stir-fry chicken until browned. Stir in 2/3 cup French's. French-Fried Onions and remaining ingredients. Heat to boiling; reduce heat. Simmer 5 minutes, stirring occasionally. Serve over pasta. Top with remaining onions. Alfredo Sauce 1/4 cup butter 1 cup Parmesan cheese, grated 1/2 cup heavy cream Garlic (I use 2-3 cloves, you don't want too much!) 1/2 to 3/4 cup Mushrooms Sauté the mushrooms and garlic in some of the butter. Melt the rest of the butter, and remove from heat. Stir in the cheese and the cream, as well as the mushrooms and garlic if appropriate, and bring it just to a boil over low heat, stirring often. Toss with warm noodles and serve.

4 or 5 slices of bacon
sliced onion
salt and pepper
preheat oven to 350 degrees
take the chicken, put salt and pepper on it, place it in a 9x13 baking dish, place bacon on chicken, and place onions on chicken, bake in preheated oven for 45 minutes or until juices run clear.
For a side dish I usually make a Caesar salad, steamed broccoli with cheese, and mashed potatoes with cream cheese and chives.
It's a very good dish.

CHICKEN BREASTS WITH GARLIC CREAM
4 whole chicken breasts (8 pieces), skinned & boned
1 egg, beaten
1/2 c. butter
1/4 c. olive oil
2 c. whipping cream
1/2 tsp. salt
5 plump garlic cloves, crushed
1/2 lb. mushrooms, sliced
1/2 tsp. paprika
1/2 - 1 c. bread crumbs
Season chicken breasts with salt and pepper and dip in beaten egg. Roll in bread crumbs and saute in butter and olive oil until golden. Place in large baking dish. Over chicken breasts pour 2 cups cream mixed with salt and garlic. (It seems like a lot of garlic, but it cooks away!) Cover with foil. (You can refrigerate overnight at this point if desired.) Bake 45 minutes to 1 hour at 350 degrees. Add 1/2 pound sliced mushrooms 15 minutes before removing from oven, if desired. Dust with paprika before serving. Serves 4 to 8.

Grilled Raspberry Chicken
• 6 boneless, skinless chicken breasts
• 1/2 cup frozen raspberries, thawed
• 1 cup raspberry vinaigrette
• 1/4 cup raspberry vodka (optional)
• 1/4 cup finely chopped mint leaves (optional)
• Fresh mint sprigs, for garnish (optional)
• Fresh raspberries, for garnish (optional)
Rinse chicken breasts and pat dry with paper towels. Place chicken in a large zip-top bag. Add raspberries, vinaigrette, vodka (if using) and chopped mint. Squeeze air out and seal bag. Gently massage the bag to mash raspberries. Marinate in the refrigerator for 1 to 4 hours.
Preheat grill to medium-high heat. Place chicken breasts on the grill and cook for 4 to 6 minutes per side. Remove from grill and place on serving platter. Garnish with fresh mint sprigs and fresh raspberries if so desired.

Cut into strips. pop it ina steamer for 10 minutes - adding some ginger and lime to the water.
Leave to rest for another 5 minutes then sprinkle over a plate of mixed salad - lettuce, rocket, spring onions, maize / sweet corn, cherry toamtoes. Even add some cooked cold pasta to fill you up a little more. sprinkle with pepper and a dash of french dressing. Yum! healthy and delicious!
