I am writing a letter to a catholic bishop and I want to use "sir" to kind of focus the letter. like when someone mentions the other person's name in what they are saying. i.e.: "I know it's hard, Sarah, but you need to study for your test." or "Sarah, listen to me." I don't want to say "Most Rev." because that is too much. Is it proper to call a catholic bishop "sir"?

Peter O is right. The correct way to address him in a letter would be Most Reverend. If you feel that's "too much", then call him Bishop.

Think of it this way, if you think it's o.k. to address a doctor as "sir", or a police detective as "sir", then go right ahead.

I don't know, it does seem a bit strange for bishops to be on the battlefield fighting for the king. All the other pieces make sense- pawns/footsoldiers, knights, castles etc but not bishops.

No they have formal addresses. Why do you want to be part of an authoritarian church but not follow the rules. It makes no sense. Here is a link: http://www.wikihow.com/Address-Catholic-Clergy
