The sciatic nerve, the "hollow of the thigh", must be removed cleanly. It's easier to sell the back half as traif (not kosher).

Because there are certain parts of a cow which are not allowed to be eaten that are located in the hind quarter. Specifically the "gid hanashe" or sciatic nerve and "chelev" a "non kosher fat" (distinct from kosher fat located elsewhere).
This can be removed but it a) requires expertise which most do not have and b) is too expensive so the easiest thing is to just sell it to a non kosher meat processor.

Forbidden Fats and Nerves
The sciatic nerve and its adjoining blood vessels may not be eaten. The process of removing this nerve is time consuming and not cost-effective, so most American slaughterers simply sell the hind quarters to non-kosher butchers.
A certain kind of fat, known as chelev, which surrounds the vital organs and the liver, may not be eaten. Kosher butchers remove this. Modern scientists have found biochemical differences between this type of fat and the permissible fat around the muscles and under the skin.

It goes back to the time when Jacob wrestled with thew angel- and the angel struck him in the thigh, leaving him lame in the leg. We learn from that, that we are not allowed to earn that nerve- and unless the nerve is removed from the hind leg, the hind quarters are not kosher. Since it is a difficult and expensive process to do- it is rarely done and getting kosher hindquarters is very difficult.

It is a Jewish custom from centuries ago, where the nerves and offal is discarded as unclean and prohibited by custom. I think an Angel caused it to become unclean. Anyway, since it is easier to sell the part of the cow from the lower ribs to the tail, instead of cleaning the nerves from it, they do.

beacsue they don't believe in eating things that aren't clean and why would they so they only eat the meat towards the front and not near the poop shoot and it's not only Jews you have a lot of Muslims who buy Kosher food for the same reason they go by strick laws and codes in preparing meats and they also don't mix meat with dairy products either I'm think because it is in the Tora and they live and die by that and that is also why they don't eta pork because a pig is a filthy animal no matter where you come from it is in the BIBLE

the back part of the cow, according to their tourah, is unclean, i.e. it has the bowels, etc., and should not be eaten.
