...of the stikky pudding?i think it's USA tradition right??( iam not sure if you spell it like this...sorry)

Sticky pudding
Degree of difficulty: Low

You need:
170g dates, stoned and chopped (you can use dried figs or prunes)
1 teaspoon bicarbonate soda
300ml boiling water
60g butter
170g castor sugar
2 eggs
170g self-raising flour
1/2 teaspoon Allspice or ground ginger or cinnamon
1/2 teaspoon pure vanilla

Sauce

400g brown sugar
1 cup thick cream
250g butter
1 teaspoon vanilla essence

Method:
Preheat oven to 180C and butter an 18cm square cake tin.

Mix dates and bicarbonate of soda. Pour over water and leave to stand.

Cream butter and sugar, then add eggs one at a time, beating well after each addition.

Fold in the flour spice or ginger (whichever you’re using) gently, then stir in the date mixture and vanilla and pour into the prepared tin.

Bake for 30-40 minutes until a skewer inserted in the centre comes out clean.

Sauce

Bring all the ingredients to the boil. Reduce the heat and simmer for 5 minutes.

Remove the vanilla bean. Pour a little sauce over the warm pudding and return it to the oven for 2-3 minutes so the sauce soaks in.

Cut the pudding into squares and pour over the extra sauce.
