Do they have a particular interest? Something connected with that, or if sort of non descript try the old standby of flowers/ chocolates/ whiskey. Most importantly your contact number then if things don`t work out with your new job, or your replacement is rubbish you can keep in contact and maybe get a recall at a higher salary.
Good luck with the new job.

Don't give a material or monetary gift. It's your boss not your friend. Think of good points to thank your boss for (friendly working atmosphere, chances to learn, etc). Always leave in the best way you can, you never know what will transpire in the future. It is better to bring something for the team as a whole to share (example: a cake).

My feeling is that we should always say thank you if we wish.
Forget that this person was a boss and remember that he/she is a human being too with all the attendant needs.

I have, in the past, written a personal thank you letter enclosed within a greetings card. As I worked in local governement we were supposed to declare any gift (!) we received but something like a book token or store token might be an adequate way to say it.

In Australia, the person leaving gets the present. Why on earth would you give your boss a gift?????????

A greeting card, the kind where you write your own message
inside, then write " I'll never forget the time when ...." . Fill in
with a time you worked really well together or he/she was an
good example of some virtue or other. " I'll never forget the
time when you stood up for me/others or when you went to
bat for X ." Highlighting a good point in others makes them
feel appreciated as a human being, not just a tie behind a desk.

A nice handwritten thank you note, maybe with a picture if you were close. If you really want to give a present, maybe a small gift card to a restaurant or coffee house.

I was going to say sex, but today I feel like giving serious answers.

Flowers, or something they need. You should mention what your boss likes to do or what kind of place you work in. It'll stir up more ideas.

Thank you card. Or a Gift Card, seems impersonal, but people like those. Do they have kids, something for thier kids is something they'll like.

3 things...

Show up early
Stay until the end
Bring in a dessert for the team

You will be remembered in a positive light and keep friends forever. Don't ever burn bridges.
