If you don't care for dark meat or you don't need a whole turkey, try roasting just the turkey breast. It's a great option for a family meal year-round, as well as Thanksgiving and holidays.
INGREDIENTS:
1 5- to 7-pound fresh (or frozen and thawed) turkey breast
Kosher salt and ground pepper
Dried herbs and spices of choice: sage, thyme, garlic powder, onion powder
Vegetable oil
PREPARATION:
Preheat the oven to 325 degrees F.
Brush the turkey breast with vegetable oil. Sprinkle liberally with salt, pepper, herbs, and spices. Insert meat thermometer to the center of the breast. Wrap and seal the breast in extra-heavy aluminum foil, with the face of the meat thermometer on the outside of the foil for viewing. Place on a wire rack in a shallow roasting pan.
Roast the turkey breast until the meat thermometer reaches 170 degrees F. (about 2 to 2-3/4 hours). Open the aluminum foil about 30 minutes before the breast is done and baste 2 times with the drippings.

make sure it is either fresh or totally defrosted never cook turkey that is partially defrosted set oven to 325 degrees use a meat thermometer usually takes forty five minutes per pound so for a four pound breast it takes about three hours if you are roasting put on a meat rack cover with tin foil to make a tent it will help make the turkey moist take tent off the last hour and brush with butter or margarine about every fifteen minutes when done let sit for twenty minutes before carving so it doesn't fall apart

Roast it in the oven, tented with foil at 350F for about 18-20 minutes per pound......and when you remove it from the oven, remember to let it "rest" for about 10 - 15 minutes before you carve it.....there is a process know as "carry over cooking", when you bring something from such an intense (think: the oven) heat, the surrounding air makes the roast keep cooking, so you might want to take it out of the oven at 165 degrees on your meat thermometer.....Enjoy!!! If you need a little more help, email me at my 360 profile.......my email address is there.....
