Brine + Pork Chop= best pork chop. Let's say, 2 qts. water. 1/2 cup kosher salt, 1/4 cup sugar, 2 bay leaves, 5 pepercorns. Bring to a simmer for five minutes. pour this liquid over 1 qt? of ice to cool it down, should disperse the salinity also. Check flavor, should be pretty salty but don't worry, that's the idea. soak pork in liquid for two hours, pat dry and grill. VERY EASY. Very tasty.
