This is the way I make it:
Peel the potatoes, cut them into small cubes, separate the broccoli into smaller pieces and then put all of it into a pot with as much cold water as the amount of soup you need. Add a little salt and pepper, some vegetable stock and a couple of crushed cloves of garlic. Bring to boil, then leave to simmer until the potatoes and broccoli are soft. Now, I´m too lazy to use a blender as you have to wait a bit till the soup cools down so this is what I do - pour the liquid of the soup into a separate pot through a sieve and mash the potatoes and broccoli with a potato masher. Pour the liqiud back again and bring to boil. Add the cheese and some single cream. Boil for a minute and that´s it. I absolutely love this soup!!!

I can give you one without a crockpot but I rarely use crockpots so, sorry on the second recipe. Easy Broccoli Cheese Soup (w/ soup pot or dutch oven) 1 box of frozen broccoli florets 1 small chopped onion 1 clove of garlic, minced (or more if you like garlic) 1 large pkg shredded chopped cheddar Enough olive oil to coat the bottom of your soup pot or dutch oven ( I prefer dutch ovens personally) 1 box of chicken broth 1 cup of milk, cream or half and half, whatever you have Salt and pepper Ground nutmeg Heat the oil in the pot and add the onions and garlic. Cook until the onions are translucent (it's okay if they get a little browned, that's just extra flavor!) Add the broccoli (it's okay if it's not completely thawed), salt and pepper, the chicken broth and the milk, cream or half and half. Bring everything up to a simmer and simmer until it's about the consistency you'd like. Slowly add (constantly stirring) the cheese until it's all melted in. Add a dash of nutmeg and serve.

Okay this is an easy one , I am also giving you a link(below) to one that takes longer but is so worth it.
Broccoli Cheese soup
1 large onion, chopped
3 tablespoons oil or margarine
chicken bouillon cubes, dissolved in 6 cups of water
2 (10 ounce) packages of frozen chopped broccoli, thawed or 1 bunch fresh broccoli, cut up
1/4 teaspoon garlic powder, dried minced garlic or one garlic clove crushed
8 ounces of angel hair pasta
1 pound of cubed Cheddar cheese
3 cups of milk
Directions
In a large pot, saute onions in oil for 3 minutes.
Add the dissolved bouillon, broccoli and garlic and cook for about 10 minutes.
Add the noodles.
Simmer 5 minutes.
Add the cheese and heat till soft.
Add the milk and heat till cheese melts and soup is hot.
Do not boil.

Cheese Soup
1 ½ quarts water (6 cups)
4 chicken bouillon cubes
2 ½ cups diced potatoes (I use frozen SHREDDED hash browns)
1 cup finely chopped celery
½ cup chopped onion
1 20 oz. bag California blend vegetables (might need to chop)
1 can cream of chicken soup
1 lb. Velveeta (I use ¼ lb. more for this single batch)
Heat first 5 ingredients for 20 minutes (let boil for a few). Add frozen vegetables and heat for about 15-20 minutes more (until vegetables are heated through and soft). Add soup and cubed cheese. Lower heat and stir alot until heated and well blended)
Makes 1 gallon. Can make ahead and heat at least 3 hours on low in crock pot.

4 cups fresh broccoli, cut into bite size pieces
1 1/2 quarts chicken broth
2 cups milk
2 (10.75 ounce) cans condensed cream of celery soup
4 tablespoons cornstarch
1/2 cup cold water
2 cups shredded Cheddar cheese
DIRECTIONS
In a large soup pot, cook broccoli in broth until tender, about 10 minutes.
In a medium bowl, mix together milk and condensed celery soup. Blend cornstarch with cold water, then stir into soup mixture. Pour into the pot with the broccoli. Cook over medium heat, stirring steadily until thick and bubbly. Stir in cheese, and simmer, stirring until hot. Do not boil.

Put a couple of pounds of frozen broccoli pieces in a large pot. Add some hearth healthy margarine, salt, and pepper. When this gets hot, and the broccoli is thawed, add some veggie broth. Simmer until the broccoli is very tender. Add a pound of shredded cheddar cheese, and pulse with a stick blender until smooth and creamy.
Soup is the easiest thing you can make homemade. Just add veggies to pot, some broth, and cook until tender.

Start with about 4 cups of chicken broth, and cook your broccolli & chopped onion, carrot slices, or potato cubes (if desired ) until tender. After that, add 2 cans of cream of celery, mushroom, or even chicken soup-undiluted, and 2 cups of milk. Add cubed Velveeta cheese (it melts smoothest, but you can use shredded cheddar too). If too thin, thicken with a flour & water paste.
You can put diced ham in this, or omit the broccoli & use potatoes, or whatever you like---it's pretty versatile.
