I don't know about the latest, but it's pretty recent. Alcohol tolerance is probably a bit more recent, having evolved within the past 10,000 years or so.
Wisdom teeth are on the way out right now! Many people are born with fewer than four. (I never had any. Woot!) This trend is likely to continue.
EDIT:
disgruntled_penguin is on the money. If you had to pick a "most recent" adaptation, it would have to be disease resistance. That trait is CONSTANTLY adapting.

Yes, it is one of the latest human evolutions. We were not previously so capable of digesting lactose.
