I'm wondering, is there a difference in the meaning of Muslim vs. Islam? I know they are used differently in sentence structure.

Is it just like the difference between Judaism and Jewish, or is there a real difference in meaning?

Yes it's exactly like the difference between Jewish and Judaism. Islam is the religion , Muslim is a follower of Islam.
Islam means submission (means total submission to the will of Allah(or God)) Muslim in Arabic means one who submits or surrenders to the will of Allah

A Muslim is an adherent of the religion of Islam (the feminine form of Muslim is Muslimah). Literally, the word means "one who submits to God)".

So you are correct: Judaism/Jewish.

Islam is the religion that Muslims follow.

I'm trying to remember correctly, but the word Muslim means one who follows the will of God.

It is like Christian and Christianity.
Islam is the religion; a Muslim is the follower of the religion (Islam). Just as, Christianity is the religion and a Christian is the follower of the religion (Christianity).

Islam = To submit ones will to the Lord of Abraham irrespective of time or place.

Muslim = One who voluntarily submits their will to the will to the Lord of Abraham irrespective of time or place.

All the Prophets sent from the Lord of Abraham were "Muslim" and their message was "Islam".
