STUFFED EGGS

6 eggs
butter, melted
salt and pepper

Boil six eggs for 10 minutes. Drain off the hot water and cover with cold water. When the eggs are cold, remove the shells. Cut in halves and scoop out the yolk.
Mash this yolk, season with salt and pepper and melted butter and refill.

Fasten the two halves with toothpicks. Great for picnics.


EGG NOODLES

2 cups all-purpose flour
3 egg yolks
1 teaspoon salt, small
1/4 cup water, (1/4 to 1/2 cup)

Put flour in mixing bowl. Add egg yolks and salt. Add water 2 tablespoons at a time until dough is stiff and easy to roll. Divide dough into 3 or 4 parts and roll 1 part at a time until it is the right thickness. You can cut the piece of rolled dough into 4 pieces and roll up and cut with a knife the width you want. After cut, put on a floured board and let dry for a while. After dried, they are ready to cook. Boil in chicken broth. Some of the dough may be frozen for later use. It takes about 20 minutes to cook a batch of noodles.

DEVILED EGGS

12 eggs, hard-boiled
1 cup Miracle Whip Salad Dressing
1 teaspoon prepared mustard, optional
1/4 cup sweet pickle relish
1 teaspoon salt

Cut eggs in half and remove the yolks. Mash with a fork then add the rest of the ingredients. Mix should be slightly moist. Spoon about 1-2 tablespoons of the filling into the egg whites or use a pastry bag to pipe the filling into the whites. Sprinkle with paprika, if desired. Cover and chill for at least one hour.
Serving Size: 24.


CHEESY EGG SANDWICHES

1/2 c. salad dressing or mayonnaise
1/4 tsp. dry mustard
1/8 tsp. garlic salt
3 hard-cooked eggs, chopped
1 c. (4 oz.) shredded cheese
1/4 c. finely chopped celery
3 tbsp. sunflower nuts
2 tbsp. sliced green onion
8 slices sandwich bread
8 tomato slices
4 lettuce leaves (optional)

In a small bowl, stir together the salad dressing or mayonnaise, dry mustard and garlic salt. Stir in chopped hard-cooked eggs, shredded Cheddar cheese, celery, sunflower nuts and sliced green onion. Chill thoroughly.
For each sandwich, spread 1/2 cup chilled egg mixture onto 1 slice of bread. Add 2 tomato slices and 1 lettuce leaf, if desired. Top with another slice of bread. Makes 4 sandwiches

Turkey Salad Stuffed Eggs

8 large eggs
2 celery ribs
2 green onions
1/2 red bell pepper
3/4 pound cooked turkey
3 tablespoons mayonnaise
2 tablespoons prepared brown mustard
1 tablespoon cider vinegar
1 teaspoon granulated sugar
1/4 teaspoon salt
Cover eggs with water, bring to boil, reduce heat and simmer for 10 minutes. Drain; hold under cold running water to cool. Peel and halve crosswise. Remove the yolks.
In a food processor, combine celery ribs, green onions, red bell pepper and cooked turkey. Finely chop, but do not overprocess. Stir in mayonnaise, prepared brown mustard, cider vinegar, sugar, and salt.
Mash the egg yolks and mix into the vegetable mixture.
Spoon one rounded tablespoon into the hollow of each egg half.
Makes 16.

Egg and Sausage Casserole mm mmm good

INGREDIENTS:
6 slices bread, cubed
1 small onion(chopped)
1 pound sausage, browned, drained (or ham,bacon,ground beef)
1 1/2 cups shredded Cheddar cheese
8 eggs, beaten
2 cups milk
1 teaspoon, salt
pepper to taste

PREPARATION:
Cube bread and place evenly in greased 9x13 pan or baking dish.
Sprinkle evenly with sausage,onion and cheese.
Mix the eggs, milk, salt and pepper. Pour egg mixture over ingredients in pan.

Bake 45 minutes at 325 degrees or until set. Cut into squares to serve.

Serves 8 to 10

Deviled eggs - basically hard boil as many eggs as you want and then cut them in half and take out the yolk and put it in a bowl. add mayonaise and mustard, salt and pepper and a pinch of peprika and mix that together. then insert the filling in a bag and cut off a peice of the bags edge and put the filling back in the holes of the egg. Yummy!

Also I like what my family calls spanish egg. Put some chopped ham, red pepper, tomatoes and onions in with your scrambled eggs and voila. Serve with buttered bread.

i like to take a 2 piece of bread make a circle hollow interior the (i take advantage of a drugs bottle good) and placed them in a skillet w/ butter. Then placed an egg interior the direction of all of the bread holes. Fry and egg.

I like making breakfast fajitas. I make some good scrambled eggs, cook some carmelized onions and peppers, and serve with warm tortillas, sour cream, salsa, cheese, and lots of hot sauce.
