Look up "Good Luck Dinner". It is supposed to bring you prosperity in the New Year, and is Hog Jaws, Collard Greens, Black-Eyed Pes, Corn Bread, etc. This is a Southern thing, so if you have never had it, then no worries, used substiutes... Like: Ham, Green Beans, Peas, Corn Bread is still good -- but rolls will do. If you do make Collard Greens, add a touch of Vinegar, and a pinch or 2 of sugar. I thought my Ex's family was crazy when they served me this, but it was a great meal. If all else fails, I'm sure KFC will be open... Best Wishes, and Happy New Year!!! M

Rosemary Chicken, rice, and salad. Great idea and isn't too fatning or unhealthy. Get some rosemary and bake the chicken in it for a long time for nice, slow cooking. The juice is ever so tasty and so is the chicken. You can have yellow rice or white rice and stuff for salad. Try Italian dressing or Ranch.
The rice you can get out of a rice-a-roni package, salad is whatever you want, and i think you bake the chicken at somewhere around 350-400 for like an hour. My mother used to season the chicken with seasonings, i think black pepper, salt, and alittle bit of creole seasoning or dashes of cayenne pepper. Well, you get the point. You can really put whatever you want on it. The juice is ever so moist. She just puts water in a pan and puts it in the oven. Bon appetit!

What about a Coronation Chicken?
Get a cold cooked chicken. Take the meat off the bones and chop up. Get about a half jar of mayo, with a good teaspoon of curry powder and a little water. Mix well and stir into the chicken. Serve with a salad and/or some cold rice&vegetables dishes.

You can use both and do a Taco Bar! Set up bowls with shredded lettuce, chopped tomato, shredded cheddar, the ground beef and thin chicken strips. For condiments I put out sour cream, hot sauce, zesty ranch sauce and salsa. Sometimes I like to put a filler dish of red beans and rice. It's delicious.

I made Swedish meatballs last night for dinner, and served it over egg noodles. They were really good. (Just not good for you! :) Or with the ground beef you could do a giant taco pasta bake. Or even goulash. Or shepherd's pie. Or you could dice up chicken and make stir-fry. Or if you have enough time and the chicken is bone-in, you could toss them in a crockpot, then shred it for chicken enchiladas.
Just some random ideas from our house.

Great with Jasmine rice and steamed veggies:
Chicken Kiev
Ingredients:
4 boneless chicken breast halves
4 tablespoons butter, softened
1 tablespoon chopped fresh parsley
1 tablespoon chopped fresh chives
1/4 teaspon white pepper, or black pepper
1/4 teaspoon salt
1/4 cup flour
1 egg, beaten with 2 teaspoons water
1/2 cup fine dry bread crumbs
Prep:
Blend the softened butter with parsley, chives, pepper, and salt. Divide into 4 portions and chill until firm.
Flatten each chicken breast half to about 1/4-inch thickness by pounding each between wax paper or plastic wrap. Place a portion of the chilled butter mixture in the center of each flattened chicken breast half. Roll each to completely enclose the butter. Dust each roll in flour then dip in beaten egg and water. Roll in bread crumbs then place in lightly greased baking dish. Cover and bake at 350° oven for 45 minutes. Uncover and bake 15 minutes longer.
Serves 4.

GROUND BEEF ENCHILADAS
1 1/2 lb. ground beef
3 tbsp. oil
Pinch of cumin
12 corn tortillas
1/4 c. ripe olives, chopped
1 1/2 c. grated Cheddar cheese
3/4 c. onion, chopped
3 c. enchilada sauce
2 tsp. salt
Oil for frying
Saute' meat and onions until meat is crumbly and onions are limp. Add 1 1/2 cups enchilada sauce, cumin, salt and simmer 30 minutes. Meanwhile, soft fry tortillas in oil and drain on paper towels. Dip each tortilla in remaining heated enchilada sauce, coating both sides. Add ripe olives to cooked meat and divide mixture among the tortillas. Roll and place overlapped side down in baking dish. Spoon remaining sauce over. Bake at 375 degrees for 20 minutes. Sprinkle with grated cheese.
Can substitute cooked chicken for ground beef.
ENCHILADA SAUCE:
1/4 c. onion, chopped
1 clove garlic, minced
2 tbsp. oil
2 cans chicken broth
1 tbsp. chili powder
1/4 c. flour
1 tsp. salt
1 tbsp. oil
1 (10 oz.) can red chili sauce
Saute onions and garlic in oil. When tender, add to boiling broth. Mix all other ingredients with chili sauce to make a heavy paste. Reduce with some of the broth to pouring consistency, to avoid lumping, and gradually stir into hot broth. Stir 5 minutes, let simmer 10 minutes. Makes 1 quart.

This is what I am making to night.
STUFFED CABBAGE ROLLS
1 lb ground beef
1 cup oatmeal
1/2 onion, chopped
8 cabbage leaves
1 can V-8 juice or 1 can of petite tomatoes
salt and pepper
1/2 cup picante sauce
1 clove garlic
Par-boil cabbage to remove leaves. Combine meat, onion, oatmeal, garlic, salt and pepper; add picante sauce.
Roll meat mixture onto cabbage leaves. Fold under tips and put into a pot roast pan.
Pour either juice or tomato sauce over rolls. Add enough water to cook.
Simmer on top of stove for 1 hour.
Serve with mashed potatoes and corn.
Enjoy!

Chicken Parmigiano
4 Chicken breasts
1 tablespoon Oregano, dried
1 tablespoon Basil, dried
1 tablespoon Parsley, dried
1 teaspoon Thyme, dried
1/2 cup Bread crumbs, fine
1/4 cup Parmesan cheese
1/3 cup Flour
2 Eggs, beaten
1 cup Cheese, Mozzarella, shredded
Pound chicken breasts to 1/4" thickness.
Sesaon with salt and pepper.
Heat someolive oil in skillet.
Combine spices with bread crumbs. Add Parmesan cheese and mix well.
Dredge breast in flour, shake off excess.
Dip in egg wash and then dredge in bread crumbs.
Fry in hot oil for about 2 minutes per side.
To serve, put a large plate of spaghetti together, both pasta and the sauce. On top of this, place your fried chicken breasts.
Top your chicken breasts with some sauce andthen the mozzarella cheese on top.
Broil until cheese browns.

1/2 lb. of frozen ground tofu (cooked)
1 packet of McCormick's Tex Mex Chili spices
1 cubed green pepper
1 or 2 cut up Jalapenos
Mix and enjoy!
