Making tonight but I have no mixer. Can I blend the pulp of the potato well enough with a spoon???

Yes I never use a mixer I add my cheese and a little milk and butter and cream with a fork. But cut your potatoes length wise BEFORE you bake them and wrap in foil. This will ensure that the skin won't tear on you.

The result might be a little lumpier than if you'd used a mixer, but it will still be delicious. If you have a food processor or blender, you can always toss the pulp in it and blend, too.

Here's my recipe for twice-baked potatoes:

4 large baking potatoes, scrubbed
4 slices crisp bacon
1/2 c. sharp Cheddar cheese, divided
1 tablespoon butter or margarine
Milk
1/2 teaspoon salt (or more to taste)
Dash EACH: onion and garlic salt, pepper

Prepare the potatoes for microwaving by piercing several times with a fork. Cook on High until done, approximately 15 minutes. (Or oven bake the potatoes at 350 degrees until done.)

Form potato "boats" by cutting a thin slice off the top. Scoop out the pulp, being careful not to tear the skin.

In a large mixing bowl, mash the potatoes with the remaining ingredients, reserving 2 tablespoons of the cheese for garnish. Add just enough milk to form a thick mixture.

Place the potato mixture back into the shells and top with the remaining cheese. Bake at 350 degrees for approximately 25 minutes or until tops are lightly browned and potato mixture is heated through. Serves 4.

You should be able to do it without a mixer. Do you have a potato masher? Use that, but if you don't have one, just mash the insides with a fork. Add all your other ingredients, and whip it up with the fork, or masher, and put it back in the skins.

Sounds yummy! Maybe I should have that for dinner tonight!

I have used a fork it works just fine if the potatos are soft enough Let the potatos cool off before slicing then in half. add a little sour cream, and your favorite chesse and your good to go.

yes...you can use a potato masher...or just a fork, mash your potatoes with the fork until they are very fine, then add a small amount of chicken stock or milk (a little butter) and start again.....mixing until smooth...then continue with your twice baked potato recipe...

TWICE BAKED POTATOES

baking potatoes
milk (either whole or evaporated)
butter
salt and pepper
cheddar cheese (shredded)

Bake potatoes until done (either at 400 deg. in oven for 45 minutes or in microwave). Cut open lengthwise and scoop out insides.
Put insides in a bowl and mix with milk, butter, salt and pepper until creamy consistency. Scoop back into potato hulls, top with shredded cheddar cheese and bake until cheese melts.

You don't have to put back into potatoe hulls if not wanted, I also add seasoning salt, sour cream & chives to mine.

I'd think a fork would work better. It can mash, and then it's great for whipping the potatoes until smooth. (I use a fork to mash hard-boiled eggs for a smooth filling for deviled eggs, don't see why it wouldn't work for potato filling!)

use a a potato masher, then a fork. its time consuming but possible.

or: use a food processor but you must be very careful: use the low setting and only pulse.

or use your blender on low and in small batches.

you should be able to do it with a fork, add plenty of butter & milk or Cream, your seasonings,etc, and mash away. If you have a whisk to "finish" it with, even better. Good Luck !!
