My recipe is a bit different than most. I do it over low heat on the top of the stove in a coverd dutch oven. The recipe is easy and can be adjusted depending on how many you want to serve.
It is: one pound of meat (I use 1/2 ground chuck and 1/2 ground round, but you can also use some ground pork or plain ground beef)
one egg
one cup of crushed saltine crackers
one small onion (or half of a large one) chopped
one small red or green sweet pepper chopped and
1/2 cup of ketchup
salt and pepper to taste
Roll up your sleeves and mix it all together with your hands. Pat into a large round flattened ball and place in your preheated and slightly oiled (tblsp of olive oil) dutch oven. Mix another 1/2 cup ketchup with 1/2 cup water and pour over the meatloaf. Cover and cook over medium low to low heat for an hour. If you are feeling adventurous, you can make a sauce/gravy out of the tomatoey pan drippings by adding a cup and a half of milk or water and some thickening. This is about enough for two people and you can jazz it up any way you like, sometimes I add italian seasoning blend. Good luck!

One pound Hamburger
some chopped onion
salt -pepper
12 crushed crackers
two eggs
Don't over mix
Place in a shallow dish form into a shape about three inches thick( a pie pan will work)
bake at 350
after 30 min check for done-ness ---watch for the juice to run clear instead of red.
After removing from the oven let it cool a little to 'set up'

The best of the best:
The following recipe feeds 2-3 people.
1 pound of Chop meat (Mince meat)
1 egg
1TABLESPOON of Onion Powder
1 TEASPOON of Garlic Powder
1 TABLESPOON of Parsley Flakes
¼ cup of Ketchup
1 – 1 ½ cups of crushed cracker crumbs (Ritz crackers or cheddar crackers (Goldfish crackers) are best)
Mix all the ingredients in a large bowl with your hands. Mixture is the right texture when it no longer sticks to your hands, but holds together without being too dry.
Form mixture into a loaf shape in a baking pan and cook at 350° (Gas Mark 4) for
1 hour – 1 hour and 15 minutes, or until outside of loaf looks nice and crusty.
VARIATIONS:
Add 1 cup of shredded cheddar cheese to mixture
Or
Put half of the mixture in the baking pan in the shape of a loaf with a slight dent down the middle. Put two hard boiled eggs lengthwise in the middle. Cover with remaining meat mixture and form into a loaf.

Really simple - Take some ground beef an egg or two and some breadcrumbs. Mix in some spices, whatever you like. You can also add things like chopped onions or celery if you want. Then form into a loaf and bake it at 350 until it's done.
