Has anyone got any ideas recipes for easy to make low calorie/low fat lunches that can be eaten cold? Ideally something I could prepare from home in the evening and put into a container and take to work with me the next day.

i used to travel everyday and i always took tuna salad, it contained i can of tuna, boiled potatoes, lettuce, cucumber, tomatoes and peppers with a little low fat mayo, will give you energy from the carbs in the potatoes to see you through untill the evening, vitamins and minerals in the vegetables and protein in the tuna, try and stay away from eating bread in large quantities and may make you feel a little tired after eating as your body works hard to digest it.

Do you have beans? I don't mean the things in tomato sauce, I mean aduki, cannelli, pinto, chickpeas ... they come dried and you soak them in water overnight and then cook them according to the instructions on the package. (I add some herbs and garlic and a slice of lemon to the cooking water.) You can also get some of them in tins.

Suggestions: add a couple of spoonfuls to a salad of tomatoes, lettuce, onion, chilis, olives and fresh coriander. (You can also add some grated cheddar or pecorino, or some mozzarella or feta.)
Or just make a bean salad with olives, onions, sundried tomatoes, celery and fresh herbs. You could add bits of bacon, or tuna or sardines if you wish.

With all salads, pack your dressing separately (I use oil and vinegar (balsamic and sometimes another) and sometimes a spoonful of honey or mustard (or both) or a squeeze of lemon juice, and extra virgin olive oil.

Delicious and healthy. Bread optional (brown wholegrain is best) but butter is a no-no. Anyway, you've got oil in the dressing, much better for you.

A ham salad, cottage cheese & low fat crackers, baked potato with salad and some cold meat, low cal sandwiches, low cal soup,ect there are loads

any kind of salad -
wholemeal pasta/ brown rice with one of the following; chicken, tuna, ham, poached salmon, prawns plus peppers, cucumber, spring onion, salad leaves, beetroot is great for filling you up! Maybe also add things like tinned beans, aduki beans are supposed to be great, but anything like chick peas, butter beans, kidney beans. cover with a little low fat salad dressing. Not only is it low fat/ calorie, but also tastes great, menas you'll get your 5 a day and it fills you up for ages!

whole wheat spag bolonase with chunky vegetables make yr own healthy sauce. im dealind with same thing and a sandwich just does not cut it...
