I want to know the verb,the noun for the mixing of the flour in the pan to make bread?

The only words I have come across are "combine" as in add all the ingredients together, "mix" as in stir them until they form a new substance such as dough in this case and "knead" specific to bread and doughs like pasta which is to work the dough against a hard surface to develop the glutin.

When you stir everything together it's called-surprise! mixing.
When you work the dough to develop the gluten it's called kneading.
