If you look in the specialty area of your local grocery, they may have them! I've found purple and red and yellow! We also have purple and orange cauliflower!

Not "once", still true! Many veges come in different varieties that mean different colors. Take the potato for instance. Have you ever eaten a blue potatoe? Or purple? Or corn, have you tried the red? Or the blue? Anyway, most of the time the flavors are similar, but sometimes there are subtle differences. Have fun!

I cannot say for sure but this is what I think. We select the foods in nature that we like. When we find a particular color, type of leaf, amount of sweetness that we like we keep that plant. In this way of selection certain characteristics are preserved to the next generation while others fade away.
We do this with animals as well. An animal with better meat to fat ratio is bread (is this correct spell?) to produce more. ETC. Etc. ...

I think that is what happened with your carrot. Some in the past decided they liked orange and planted more of it's seeds.

Today we find grows that discover a recessive gene expression in a plant that is unique, breed that plant.

I've actually seen a green carrot somewhere, but I can't remember where. There are white, orange, red and green carrots.

I do not think so. But I am not sure if carrots look more green when they are still growing or something.
