Put oil in a frying pan and heat to med. high.
Put slit in bologna from middle to all the way through the end.
Put bologna in heated oil.
Brown both sides.
Add cheese to top while last side is browning.
Spread mustard on both sides of bread.
Add bologna between slices and gobble it up!

Dear Beagles,
Back in the 1950's when I went to my girlfriend's house that is what her father would prepare for our lunch...we didn't have air conditioning back then...and I recall the kitchen being very HOT...and her dad standing there frying the bologna for our sandwiches...he put them on hamburger buns....along with: lettuce, tomato and thin sliced sweet onion....he put yellow mustard on the meat side of the bun and mayonnaise on the lettuce side of the bun....and the rest in between....What I remember is ....he cut the bologna around the edges so it layed flat....little notches...like V-shape....about 3 of them...then he fried it in butter on medium heat ...and flipped it over once to lightly brown the meat...then drained on paper towel then onto the prepared buns with all the trimmings....we might have had sweet or bread and butter pickle on the sandwich too....your question brought back some great memories...thanks

Here's how I make it for sandwiches:
Cut each slice in half and then make a small slit on the straight end of each half (this helps to keep it from curling as it heats). Put in a dry skillet. It has plenty of it's own oil to keep it moist. I fry six halves for each sandwich, 1st side for about 3 minutes and then flip for about three. That's how I like it, but the man likes it cooked a little longer. Put whatever you want on your sandwich and ENJOY!

slice your bologna thick, snip the edges so it don't roll up in the pan, fry with a little grease, make gravy to put over it. umm umm good.
