I can't really cook anything... but I want to make noodles with some type of fettuccini alfredo sauce. Something simple... milk cheese... easy to make. Doesn't necessarily have to taste the same as alfredo. Just something using parmesean cheese and milk... something simple. A short simple recipe for idiots.. thanks.

Well, if you really want to use milk, you are going to have to thicken it a bit to get that nice alfredo sauce consistency.

Put a tablespoon of butter in a pan, melt and stir in a tablespoon of flour . Keep stirring until nice and bubbly and flour just starts to brown then slowly add a cup of milk, stirring all the time. It will thicken. Remove from heat add salt & pepper and grated parmesan cheese. Pour over your already cooked noodles!
Real alfredo sauce is much richer and uses lots of butter and Cream.

A super quick cheater way is to just heat butter and cream and mix with your cheese and stir into your pasta.

Olive Garden's Garlic Alfredo Sauce

1/2 cup butter
2 tablespoons cream cheese
1 pint heavy cream
1-2 teaspoon garlic powder (start with 1 and taste)
salt & freshly ground black pepper
2/3 cup fresh grated parmesan cheese or romano cheese

In a medium to large saucepan melt the butter over medium heat.

Add the cream cheese and whisk to smooth and melted.

Whisk in the heavy cream.

Season with the garlic powder, salt and pepper.

Bring to a good simmer and whisk frequently until sauce thickens, around 25 minutes.

Remove from heat and stir in cheese.

Taste and adjust seasoning's.

P/s:I normally substitute heavy cream for 1/2 and 1/2. I guess it depends on your prefrence.

How about the real McCoy? Simple.

Real Fettucine Alredo

1 pound fresh fettucine
8 Tbsp. butter
1 cup heavy cream
1 cup freshly grated Parmigginao-Reggiano cheese
Freshly ground black pepper, to taste
Freshly grated nutmeg

As the water for the pasta begins to boil, melt butter in large sauté pan over low heat. Add cream to butter and let it warm.

At the same time, salt the pasta water and cook until al dente. Drain pasta thoroughly, and mix with butter and cream in sauté pan over low heat. Add cheese and toss until sauce thickens slightly. Season with pepper and nutmeg.

Remove from heat and serve immediately with additional cheese on the side.

Serves 4-6

Fettuccine Alfredo

INGREDIENTS
4 ounces uncooked fettuccine
1/4 cup milk
1/4 cup butter or margarine
1 (3 ounce) package cream cheese, cubed and softened
1/3 cup grated Parmesan cheese
White pepper
DIRECTIONS
Cook pasta according to package directions. In a saucepan, heat milk and butter until butter is melted. Stir in cream cheese and heat until melted. Add Parmesan cheese and pepper if desired; cook and stir until blended and heated through. Drain pasta and transfer to a serving bowl. Pour sauce over fettuccine; toss to coat.

they sell alfredo sauce in a jar like tomato sauce....it's right next to it. also....foodnetwork.com has a lot of recipes from the shows
