Honey wheat pretzels! Yummy! If you have a cooler try packing dip with carrots/peppers or whatever veggies you like! Fruits would work too. If not you can bring those little fruit cups and those cheese and crackers/pretzel packs. If you have to resort to chips get the baked ones

Clean hands, no mess, less distraction if you are eating while driving foods that I have found for adults (suggest you stop for food breaks and remove kids from child seat or have somebody awake and monitoring older children) are:
Salty -
Shelled unsalted roasted almonds (never for little ones)
Saltines with unsalted tops
Veggies; (do you really need dip?) pre-cut chips or baby carrots or sliced cucumbers. whatever not-too-juicy veggies you like.
Sweet -
Fresh blueberries (OK for kids once they get some teeth; oh, and eat a couple before buying to make sure they are tasty)
Grapes; Fresh or Washed and Frozen, cut in half for kids.
Honey-nut Cheerios
Mini-Nilla Wafers (one of the lower sugar content cookies out there, discounting the artificially sweetened which is not good for the kids)
I put all of these things into zipper-lock baggies for ease of retrieval and re-closing on the road. Hope this long-winded suggestion helps you out!

Fresh fruit is always a tasty, healthy snack, and it goes great with cheese and crackers. You can buy string cheese in individual wrappers, and it doesn't require refrigeration. Baby carrots are good, too. I always stock up on all of the above, plus assorted shelled nuts (no mess), fruit drinks, and water. Coffee is a must; I always take at least one large thermos-full.

pretzels, water, fruit, veggie pieces, sub sandwiches, cold baked or grilled chicken, and for the sweet tooth oatmeal cookies.( much better than granola bars.) Keep perishables in a good cooler.

trail mix, add bits of everything tht everyone likes, peanuts, sunflower seeds, some m&m's. or make osme GORP (granola, oats, raisons, peanuts) with something sweet like honey nut cherios. Also light butter popcorn is a healthy alternative.

Chex snacks mix is great. as well as a custom made trail mix. You can put your fav snacks in........... Also they have 100 calorie snacks at most Wal Marts and such. Those are really good..

Carrots and/or celery for dipping in peanut butter. Craisins, Raisins, dried fruit of any sort... nuts, nuts, nuts... baby rice cakes (though they can get messy)... little bags of cheerios or other cereal to munch on... fruit.

i really like trail mix bars, i think they're by nature valley. Goldfish crackers.
