It's about filters and tact. We don't share everything that's on our minds with everyone because (unless we are complete sociopaths) we care about offending others and preserving some level of harmony with our fellow man.
You might think that your wife has looked fat and dumpy after she had a baby. Would you tell her that? Probably not. Why? Because it would unnecessarily hurt her feelings. It may be the truth, but must the truth be expounded in all instances? Of course not. Or suppose one of your buddies is REALLY homophobic and privately thinks his gay boss is offensive. It may be the truth, but if he has any brains and doesn't want to be fired, he wouldn't talk about his feelings in public.
The point is, sometimes you keep things to yourselves, or confined to small "inner circles" of trusted compadres, because the subject might hurt others or cause bad feelings.

Oh yeah, I know exactly what you mean, but we're too polite to to discuss this stuff in public. Not everyone will admit to discussing taboo subjects, and some people probably just skirt the issues more than discuss, but i think, like you, we all have at least one or two people where anything goes as far as conversation is concerned.

Usually intimate conversation are restricted to close friends, family or partners who may be like minded. There is no guilt with doing this that I am aware of.
You don't know how the 'public' thinks. We are all different and have different values and thoughts about what we feel is appropriate.

People are very uptight, especially in America. They are very easily embarrassed by 'taboo' subjects of conversation. It is too bad, but just use reason and understand that they are like that and go on with your enjoyment of these type of conversations with friends. In other words, 'that's life'. Who cares? At least you can say to yourself, "I am open and NOT uptight. I am a free-spirit." That's what I am and that's what I say to myself. It's a great way to be and it's a great way to live life.
