I have a lot of boneless chicken breasts ( on sale this week at Fry's) anyways whats some creative yet easy things I can do with it? Please share!

Super easy and yummy recipe.

Put 4 chicken breasts in a baking dish. Mix 2 cans Cream of Mushroom Soup, one pouch of dry onion soup and one cup milk. Pour over chicken. Bake at 350 for 45 minutes.

The best way to keep chicken moist while baking is to coat it with mayo. For 3-4 large breasts, I mix 1/2 cup mayo with 1/4 cup shredded parmesian cheese, and then spread it over the chicken. Cover and bake,removing foil for the last 10 minutes. Very tender!

Stir fry is always good, or quesadillas. To do the que's, I grill my chicken, slice it. A tiny bit of olive oil in a skillet, let it heat, place a flour tortilla in the pan, load half with chicken, shredded cheese, peppers, etc, flip the empty half over and voila!

Creamy Chicken Curry

Take a few fillets and cut them into thin strips.

Slice an onion and fry with the chicken until browned all over.
Add a couple of teaspoons of curry powder (as hot as you like)
and fry for a couple more minutes. Then add some cream and creme fraiche for the creamy sauce. Simmer for 10-15 minutes until the meat is tender.

Serve with rice.

You can also use turkey or pork.

Okay, this is not a recipie per say, but here's what I do....make chicken quesidilla type of things. I just sautee the chicken until it's golden brown and done on the inside with whatever spices I feel like using. Cu the chicken breasts into smaller chunks. Put them on some soft tortilla shells and top with whatever veggies you have on hand (I really like tossing on corn and broccoli)and sprinkle on cheese. Roll up the shells, dip into sour cream or salsa, and enjoy.

Probably lacking in creativity but they are easy....

*Coat in a mix of equal parts sea salt and five spice and fry in a small amount of peanut oil...I serve this with steamed rice and wilted asian greens.
*Cover one side with basil pesto, top with parmesan cheese and then wrap in bacon and bake in the oven.
*Poach in red curry paste, coconut milk and chicken stock. Then add lime juice, fish sauce and bit of brown or palm sugar and serve as a sauce.
*Cut into strips and coat in plain flour, white pepper, sea salt, five spice powder and fry for salt and pepper chicken.

Chicken Marco Polo

Ingredients:
2 boneless chicken breasts
1 cup flour
2 tbsp oil
6 slices of prosciutto
6 stalks of asparagus, cooked
6 slices of mozzarella cheese
4 tbsp butter
2 minced shallots
1 cup sliced shittake mushrooms
2 cups veloute sauce*
1/2 cup Madeira wine
2 tbsp chopped parsley

Prep:
Heat oven to 350 degrees.

Dredge the chicken in flour and saute in skillet with oil until golden brown on both sides.

Place the prosciutto and asparagus on top of the chicken and cover with mozzarella. Place in oven to warm and melt the cheese.

Meanwhile, saute shallots and mushrooms in melted butter until tender. Warm veloute sauce and add wine.

To serve, remove chicken from oven and place on plate. Surround with shallots and mushrooms. Cover with veloute sauce and sprinkle with parsley.

*To make veloute sauce, melt 2 tbsp butter in a saucepan and stir in 2 tbsp of flour. Cook, stirring for several minutes to cook flour (do not brown). Whisk in 1 cup chicken stock and stir until thickened.

ONE PAN CHICKEN FIESTA

1 pkg. Betty Crocker au gratin potatoes
1 1/4 c. boiling water
1/3 c. milk
2 tbsp. canned diced green chilies, drained (optional)
2 chicken breast halves (excess fat removed)
1/4 c. shredded Monterey Jack cheese
1/4 c. shredded cheddar cheese
1 med. tomato, chopped

Heat oven to 400 degrees. Place half of the potato slices (about 1 1/4 cups) and half of the sauce mix (about 1/4 cup) in ungreased square pan, 8x8x2 inches. Store remaining potato slices and sauce mix in resealable plastic bags up to 2 weeks. Stir in boiling water, milk and chilies. Place chicken breast on top. Bake uncovered until chicken is done and potatoes are tender, 45 to 50 minutes. Sprinkle with cheeses; bake until melted, about 5 minutes longer. Garnish with chopped tomato. 2 servings.
High altitude directions (3500 to 6500 feet) : Increase boiling water to 1 1/3 cups and first bake time to about 1 hour, 10 minutes. Note: I use the whole package of au gratin potatoes and use the package amounts of water and milk (give or take).

DAD'S EASY CHICKEN PARMESAN

1 1/2 pounds boneless/skinless chicken breasts
1/4 cup breadcrumbs (plain or seasoned)
1/4 cup flour
3 tablespoons olive oil
1 20 oz jar spaghetti sauce
8 oz shredded mozzarella or shredded Parmesan cheese

In separate bags put breadcrumbs and flour. Cut chicken in the center lenghtwise to make thin and wide chicken breasts. Coat chicken with breadcrumbs by shaking in bag. Remove from bag with breadcrumbs and shake in bag of flour to coat well.
In a large frying pan, pour olive oil to coat bottom of pan. Heat pan over medium heat. Place coated chicken into the hot pan. Brown for 3 minutes on each side.

Wipe pan clean. Return chicken and add spaghetti sauce. Cover and let cook for 30 minutes over low heat. Stir and turn chicken occasionally. Melt cheese over chicken for five minutes.

Serve alone or over noodles.

I love chicken ranch burgers. Just grill the chicken, put them in some sub rolls or whatever buns ( I like the ones with flavor ) and then just add in the ranch dressing, tomato, lettuce, and if you want bacon as well.
