Hi !!!
This is what I would suggest...

Baked Potato Soup

Estimated Times:
Preparation - 15 min
Cooking - 10 min
Yields - 4

Ingredients:

2 large or 3 medium baking potatoes, baked or microwaved
Cooked and crumbled bacon (optional)
1/4 cup (1/2 stick) butter or margarine
1/4 cup chopped onion
1/4 cup all-purpose flour
1 can (14.5 fl. oz.) chicken broth
1 can (12 fl. oz.) NESTLÉ® CARNATION® Evaporated Milk
Shredded cheddar cheese (optional)
Sliced green onions (optional)

Directions:
MELT butter in large saucepan over medium heat. Add onion; cook, stirring occasionally, for 1 to 2 minutes or until tender. Stir in flour. Gradually stir in broth and evaporated milk. Scoop potato pulp from 1 potato (reserve potato skin); mash. Add pulp to broth mixture. Cook over medium heat, stirring occasionally, until mixture comes just to a boil. Dice remaining potato skin and potato(es); add to soup. Heat through. Season with salt and ground black pepper. Top each serving with bacon, cheese and green onions, if desired.

VARIATION: For a different twist to this recipe, omit the bacon, cheddar cheese and green onions. Cook 2 tablespoons shredded carrot with the onion and add 1/4 teaspoon dried dill to the soup when adding the broth. Proceed as above.

Funeral Potatoes

Ingredients:

6 cups diced potatoes*
1 can (10 ¾ oz.) cond. cream chicken soup
1/2 soup can milk
1 cup sour cream
1 cup sharp cheddar cheese, grated
1/4 cup grated onion (optional) **
salt and pepper to taste
3 tablespoons butter, melted
3/4 cup corn flake crumbs

Method:
- Cook fresh potatoes or thaw frozen potatoes (see *note below). Place potatoes in a 2-3 quart casserole dish or a 9x13 cake pan.
- Combine soup, milk, sour cream, cheese, and onion (see **note below) and salt and pepper to taste. If a saucier dish is desired, add 2-3 tablespoons additional milk. Mix well. Spread sauce over potatoes.
- Melt butter and combine with corn flake crumbs. Sprinkle crumbs over casserole. Bake uncovered at 350 F for 30-45 minutes or until hot and bubbly throughout.

Notes:

* Use approximately 6-8 peeled, diced, and cooked fresh potatoes; or approximately 2 pounds frozen, southern style, diced hash browns (not shredded). ** Use 1 tablespoon dried onion or sauté 1/4 cup fresh chopped onion in 1 tablespoon butter until transparent.

Recipe serves approximately 8.

Rinse the potatoes under cool, running water. Get a bowl or glass pie pan, melt 1 Tbsp. margarine in the dish in your microwave (30 seconds). Cut ea. of your potatoes into quarters, peels and all. Put the sliced potato wedges in the pan; sprinkle with salt, pepper, garlic, chopped onion and parsley. Cover all with plastic wrap. Nuke on high for 5 min., let set for about 1 min., then microwave for another 5 min. Check for doneness. If tender, you can cover with some grated cheese or cheese slices and put back in for a minute to melt cheese. If not tender, nuke another 5 min. Keep up this routine until potatoes are tender, waiting till this time to add cheese. After cheese melts, remove dish from microwave and let stand for about 3 to 5 min to cool enough to eat. Serve. Very tasty and looks like lots of preparation to your guests, but much simpler than peeling, cutting, rinsing and waiting for them to boil; then mashing with a little butter and milk. Either way is good. You can't go wrong with potatoes! Very simple? Just rinse potatoes, poke holes in each with a fork and microwave for 5 to 10 minutes. Can do as many as you want with either recipe. Figure 1 1/2 potatoes for each person.

Not at all. The little white nubs are new potato life. It's hardly the end of anything but the start and continuation of life. As a lover of yams I'll bet you knew this all along. ; - ) On a more practical note - they're safe to eat. Just cut out the eyes. Better yet plant them!

We had roasted potatoes, carrots and onions as a side for our chicken wings tonight.

Wash 4 potatoes,do not peel, cut into large dice about 1", cut a onion into wedges, in a bowl place potatoes, onion and 2 cups of baby carrots. Coat veggies with olive oil and season with salt and pepper. Spread in a single layer in a baking dish sprayed with cooking spray. Bake in a preheated 350 oven for 40 min. or until potatoes are fork tender.

Try this recipe for wings.
2# of chicken wing drumettes
2 Tbs olive oil
1 tsp of garlic powder
salt and pepper
brown sugar

In a bowl coat the wings with oil , salt, pepper and garlic powder. Spread in a single layer in a baking dish sprinkle with the brown sugar and bake along side the potatoes. Both dishes go in and come out of the oven at the same time. Add a salad if you like to round out the meal.

i like to take potatoes and peel and dice them rinse them in cold water put in a bowl and take spoonfuls of butter some salt and pepper and mix all together then dump out on cookie pan or baking sheet and bake at 350 for about 15 -20 minutes. its delicious!

I've been eating a lot of potatoes lately...I take bratwurst and slice them into little round pieces and then fry them nice and brown, and then take them out of the pan, leave the grease... then i dice the potatoes into small pieces and fry them with a little bit of garlic salt and pepper...then i add the brats back in and voile'.....a tasty meal in under 30 minutes...and yummy too. probably pretty fattening tho.

You can make mashed potatoes with salt pepper, cheese and butter. You can make a beef stew with potatoes in it, also baked potatoes, french fries, there are endless possibilites.

Cook up a batch of French Fries.....then bake some using the Microwave.., etc...
