what can I do with raspberries that have turned a bit mushy? They are not bad yet, just not completely firm, but I don't want to waste them if possible. Can I freeze them like this, and if so, what I could use them for later? Also, what could I use them for now?

They would make a lovely coffee cake, or muffins. Smoothies, of course, are always great, as is homemade jam, or lemonade...soo many options. Raspberries are delicious!

You can freeze them, but it will only make them more mushy when they are thawed since ice crystals will form inside the fruit, damaging the cell walls. If you choose to freeze, lay them on a sheet pan lined with wax paper, place in the freezer. When they are frozen you can pour them into a baggy and place it in the freezer. This way they won't stick together!

I would say the best thing is to use them now. You can make a vinegarette. I'm not sure how much you have so It's hard to give an exact recipe. Put the raspberries in a blender, lets say 1 cup, add 1 tablespoon Dijon mustard, 1/4 cup white wine vinegar or any kind you like, 1/2 teaspoon salt and 1/2 teaspoon pepper. Blend until pureed and slowly add olive oil until you hear the sound of the blender change, you will know what I mean, it should be about 1 cup of oil. This is great on salad, grilled chicken or fish.

Raspberr Sauce as a topping for ice cream.......very simple,

Triple Raspberry Sauce:
1 half-pint fresh raspberries
1/2 cup sugar
1 cup seedless raspberry jam (12-ounce jar)
1 tablespoon framboise liqueur
Place the raspberries, sugar and 1/4 cup water in a small saucepan. Bring to a boil, lower the heat, and simmer for 4 minutes. Pour the cooked raspberries, the jam, and framboise into the bowl of a food processor fitted with a steel blade and process until smooth. Chill.

Raspberry Jam, just boil the raspberries down with some sugar and a 1/4 cup of water........till it is quite thick....stirring constantly......

Amaratto and Raspberry Smoothie:


12 ounces fresh raspberries (or 12-ounces frozen raspberries, thawed), divided
1 quart vanilla gelato (or ice cream), lightly softened, divided
2 tablespoons almond liqueur (recommended: Amaretto), divided
2 teaspoons orange zest, divided
Ice
4 Italian macaroon cookies (recommended: Amaretti), divided


Place half the raspberries in a blender with half the ice cream, 1 tablespoon almond liqueur, and 1 teaspoon orange zest. Pulse the blender until the mixture is combined. Add about half a tray of ice and blend until smooth.
Divide the smoothie between 2 highball glasses and continue making the other 2 smoothies with the remaining ingredients. Crumble the macaroon cookies over the top of the smoothies. Serve with long spoons and a straw.


Raspberry Cream on Pound Cake:



2 ounces cream cheese
4 (3/4-inch thick) slices pound cake
2 ounces seedless raspberry jam
1/2 pint fresh raspberries, very ripe

Spread cream cheese on each of 4 pound cake slices. Spread raspberry jam over cream cheese, top with raspberries......Serve Immediately.....

throw them into muffins, breads or even pancakes for an awesome addition. Also think about blending them with some honey, yogurt, bananas, strawberries and a few ice cubes for a killer breakfast treat. There are a bunch of ways to use over ripe fruit, just get creative and change their consistency and you'll never be able to tell the difference (bake, puree, spread, cook).

make jelly
my friend gave me this recpies sooo good

INGREDIENTS
4 1/2 cups ice cubes
2 cups milk
1/3 cup white sugar
2 cups berries
1 teaspoon vanilla extract
DIRECTIONS
Fill the blender 3/4 full of ice cubes. Pour in the milk, sugar, berries and vanilla. Blend until smooth.

you could make them into a jam or you could cook them and make a yummy berry syrup and poor over some angel cake...
you can freeze them cause if uve ever noticed frozen fruit is quite mushy when it thaws...so if the people who package it freeze them that way...youll be fine...
try reducing it to a syrup though, thats my reccomendation!!

Rasberry smoothie.... or throw them in a food processor or blender, add some kind of liquor if you wish, puree and spoon over pound cake or brownies... yummmmm.... good luck and have fun!

Use them right away; freezing won't improve them any.
