I've been told to do interval training, whats this, I'm 41 and doing 8 minute mile pace at the moment

YOu don't provide any details about how long you've been running nor how many miles you do a week, so it's hard to give you the best answer.

But assuming you've been doing some mileage, I'd start doing 2 days a week at the track. Jog half a mile warmup, stretch, then do 10 x 100s, then a half mile cooldown. On the track, run the straights hard and purposefully but controlled, then rest on the turns (walk, jog, whatever).

By September, you should see a good improvement.

BTW, it's encouraging that someone asks about a plan that has enough time built in to be successful. Most people want magic tips the night before a race, and that ain't gonna happen.

Intervals is where you get on a track and start going from smaller -> longer speeding up.. would suggest just running more distance. The higher your endurance the more you can push it.
