Ingredients:
1 or 2 Tablespoons of Extra Virgin Olive Oil
1 or more yellow crookneck squash or zucchini or a mix of both vegetables
1 medium onion, or more for larger quantities of vegetables
Kermit’s Fresh Key Lime & Datil Pepper Seasoning - - season to taste
Season All - - season to taste
Minced garlic, if desired - - season to taste
1 Tablespoon of grated Parmesan cheese; use more for larger quantities
Note: This recipe has a lot of flexibility and readily adjusts to the vegetables on hand. It is best to select young and tender squash and zucchini fresh from the garden. However, the larger, more mature squash and zucchini may also be used. Simply keep the slices thin and cut the slices into halves or quarters, so the pieces will cook quickly.
As a variation, add mushrooms. Sliced baby Portobello mushrooms are particularly good.
Preparation:
Slice the onion, crookneck squash, and zucchini into thin slices (1/8 inch to 1/4 inch thick) and set aside. Keep the onions separate from the squash and zucchini.
Heat the olive oil in a skillet on medium heat and allow the oil to completely coat the bottom of the skillet.
Add the sliced onions and allow them to cook for a few minutes, until they start to get tender.
Add the squash, zucchini, and minced garlic.
Stir the ingredients in the skillet periodically to insure even cooking. If the skillet is full, cover to aide in getting the squash and zucchini pieces uniformly done.
Add the Key Lime & Datil Pepper Seasoning and the Season All to taste.
The squash and zucchini are done when then are tender, but still have a bit of “crunch.” Be careful, it is easy to overcook the squash and zucchini.
Remove the cooked onions, squash, and zucchini to a bowl and sprinkle with Parmesan cheese.

I like roasting vegetables. I slice up a cup each of whatever of these I have on hand: Onions, bell peppers, squash (zuchini or yellow), mushrooms, tomatoes. Toss with a little olive oil, spread in a pan, and bake at 350 degrees until the veggies are tender. Sometimes I add a few garlic cloves to the roasting pan.
To make a great sandwich, press the garlic into some mayonaise, and add a bit of lemon juice. Spread on a good bread like ciabatta, then add the veggies.
I've also just pressed the garlic into the vegetables, then add the veggies to burritos, other sandwiches, or on top of pasta.

Get a steamer. Fill the bottom with water and the top with your vegies. You can dress vegetables up with flavorings like olive or balsamic oils, lemon juice, mix with almonds, add cheese. There are many good baked options as well. Get some cookbooks and check out all the things you can do to make a better vegetable dish.

EASY VEGETABLE MEDLEY
I use this recipe as a main dish served over rice. Fresh vegetables of your choice:
Green pepper
Zucchini
Broccoli
Cauliflower
C arrots
Onions
Cook in 1 cup water with 2 teaspoons chicken bouillon or similar product, and 2 teaspoons basil just until tender, do not over cook.
The basil and chicken broth or bouillon are the secret to this great tasting dish - it's fast, easy and versatile - serve over rice or not - add any vegetable you like - may also add cubed ham or chicken.
QUICK EASY VEGETABLE SOUP
2 bottles tomato juice
2 pkgs. frozen mixed veggies
1 onion
2 stalks celery
Salt & pepper
Put all ingredients in a large saucepot and cook over medium heat until boiling. Reduce heat and simmer until of consistency you desire.

All these things are great but boring. do a stir fry noodle type thing with plenty of veg like peppers and tomatos. also things like carrot sticks instead of chocolate is good and soups just check out a recipe website or invent one with all the things u like i would start with vegatable pasta, easy and tasty

Melt cheese on your vegetables. It's great on steamed green beans.
Another easy recipe is to get pre-made soup like Progresso, and add vegetables to it while it's cooking.

Acorn squash, parm cheese, egg, salt, and pepper mashed together and used as a filling in your home made OR store bought fresh or frozen pasta.
You can saute mushrooms in olive oil, butter, and lemon juice and serve over top of your ravioli or shells or whatever! Sprinkle over some extra cheese.
