It can all vary.
While not racing, crews are working on them to fix up whats wrong with the car if there was problems with it in a race, or replacing parts on it that way its ready to go for a race.
The old race cars, that can vary wildly. Sometimes, they are scrap, and just taken apart after the are useless. Sometimes, the old racecars, after their usefullness in NASCAR is done, will be sold to teams that race cars in smaller series (like ARCA), or local racetracks. Sometimes, if the race car is special enough, or was a part of a certain moment, they will have it on display at the shop, or at a museum.

The cars are stored in the team shops, after a race they're repaired and the cars can be used for another race on the same type of track. The older ones can be sold off, kept in the team's museum or used as show cars(the ones that you see doing appearances at supermarkets and stuff). Sometimes with the show cars they'll cut a door into it and the public can sit in it and get their picture taken sitting in the car(done this with the #20 car). Or even cooler install a PS2 and a monitor and they let you play the latest version of EA's NASCAR game while sitting in the car(done this too).

To CORRECTLY answer your question (as written).........
NASCAR does not own any race cars. Therefore there is no need to store any racecars. Same goes for the "old NASCARs," there are none, so, no storage needed.

Some of the winning cars go to Nascar hq for display.
The teams store theirs in their shops.
I think Jr has one in his yard.
Some are sold to other racing circuits.
