i have these things...chicken roasters, that you put the chicken on and cook them in the oven. the thing I don't have, is any recipes or any idea how to cook them on these things....any suggestions??

its a roaster that you put the chicken down onto. the grease drips into a pan.

Are you talking about the roaster you sit the chicken upright on? If so, it makes great chicken. I marinade the chicken in a mixture of wine, dijon mustard, green onions, garlic soy sauce, lemon juice and kosher salt. I put it all together in a big bag for about 3 hrs. Then fill the center of the roaster with wine, put the prong on, set the guy up & bake at 325 or put on indirect heat on the grill. A 3 or 4 lb. chicken should be done in about an hour or when the thermometer reaches 180. Let rest for 5 or 10 min. wrapped in foil.

EASY CHICKEN ROASTER

Prep Time: 15 Minutes
Cook Time: 2 Hours and 45 Minutes
Ready In: about 3 Hours
Makes 3 to 4 servings

Ingredients:
1 whole chicken roaster 5 to 7 pounds
2 tablespoons olive oil
1/4 cup mild chili powder
2 tablespoons garlic salt
2 tablespoons black pepper
1 teaspoon cayenne pepper

Directions:
1. Preheat oven to 350 degrees F.

2. Remove giblets from chicken. Place chicken roaster breast up in roasting pan. Rub skin with oil. Cover with aluminum foil.

3. Roast for 45 minutes. Remove foil and roast 30 minutes.

4. Meanwhile, combine remaining ingredients in a small bowl, set aside.

5. Rub skin with spice mixture. Continue to roast, basting occasionally, for 1 hour and 30 minutes or meat thermometer inserted in thickest part of thigh registers 180 degrees F.

6. Remove chicken roaster from pan; cover and let stand for 10-15 minutes.

INGREDIENTS:
1 roaster chicken, about 4 pounds
butter

Stuffing:
1/2 cup chopped onion
1/4 cup butter
1/2 teaspoon dried leaf thyme, crumbled
2 tablespoon chopped fresh parsley, or 2 teaspoons dried parsley flakes
2 cups soft bread crumbs
1 beaten egg
1/3 cup milk
salt and pepper

PREPARATION:
In a skillet, melt 1/4 cup butter over low heat; saute chopped onion for 3 minutes. Add thyme, parsley, and bread crumbs. Stir in egg and enough milk to make dressing moist. Season with salt and pepper.
Spoon stuffing into cavity of chicken; close by sewing or with a piece of foil.

Rub chicken with butter. Place chicken breast side up on rack in a shallow roasting pan. Roast stuffed chicken at 375° for about 60 to 70 minutes, basting several times. Internal temperature should register 175° when done. Let chicken stand for about 15 minutes before slicing.

season it w/ seasoning salt, rosmary, peper, stuff it w/ mushroom and lemon. its simple and tasty
