Here's a California Roll recipe for you! Enjoy.

California Roll
From Setsuko Yoshizuka,

California roll is one of the most popular sushi rolls in the world although it isn't so popular in Japan. Since typical sushi rolls are rolled in dried seaweed, many people who aren't used to eat dried seaweed tend to have hard time to bite sushi roll. This is one reason that california roll is made inside-out, so that it's easy to bite.

California Roll Recipe:

Ingredients:

4 sheets dried seaweed (nori)
4 cups sushi rice
1 avocado
1/2 lb. imitation crab
1 tbsp mayonnaise
1/2 tsp salt
2 tsps sesame seeds
How to Cook:

Peel an avocado and cut it into strips or mash it.
Put imitation crab in a bowl and mix with salt and mayonnaise.
Cover a bamboo mat with plastic wrap.
Put a sheet of dried seaweed on top of the mat.
Spread sushi rice on top of the seaweed and press firmly.
Sprinkle sesame seeds over the sushi rice.
Turn the sushi layer over so that the seaweed is on top.
Place avocado and crab lengthwise on the seaweed.
Roll the bamboo mat forward, pressing the ingredients inside the cylinder-shaped sushi.
Press firmly the bamboo mat with hands, then remove the rolled sushi.
Cut the sushi roll into bite-sized pieces.

you want to make it or order it in a restaurant?

First thing to know is that the word sushi means "with rice". So when you order sushi your getting whatever+rice.

Sushi breaks down into two principle types -

Nigiri Sushi which is usually a piece of fish on top of little formed ball of rice.

Maki Sushi which is the rolled kind. When you see two listings of sushi on a menu they are usually broken down by Nigiri and Maki.

Specific to your question for the common sushi bar -

California Rolls contain surimi (fake crab meat) that you see in grocery stores. Some places server California Roll with Tobiko on the outside. Tobiko is flying fish eggs (small bright orange dots). Tobiko adds a salty crunch which is very nice. My young daughter loves it.

There is a cucumber roll (called Kappa Ma).

And there is something called Tamago, which is sort of like an omelet nigiri sushi.

Also a version of shrimp called Ebi, which is cooked shrimp nigiri sushi.

Salmon, because it's a fresh water fish is required to be smoked - so technically it's cooked, however the texture is very much like a raw fish.

I highly recommend trying Himachi (yellow tail tuna) and Muguro (blue fin tuna). Although server raw they are most excellent.

Sushi is something that either you love or hate. To some people the idea of eating raw fish is disgusting. It was for me until I tried it trying to impress a date. I never went out with that girl again but found a real passion for sushi.

California roll is cooked pollock flavored to taste like crab. Also shrimp tempura is also cooked. Cucumber rolls are of course made of cucumber.

But give the salmon sushi a try, Its just like lox. Good sushi should never have a smell and with some exceptions (Mackerel), should not have any fishy taste.

Go easy on the wasabi. Try it but in very small amounts. Its like a horseradish that has a quick bite but subsides quickly. For myself I like to have enough wasabi to make my eyes bleed, but you have to build up to that.

Most newcomers to the sushi scene start with the California roll. Generally it's imitation crab, which is cooked, not raw, plus matchstick cucumber pieces and avocado slices. It's rolled in a sheet of cultivated, processed seaweed along with flavored short-grain rice. Often the outer surface is garnished with toasted sesame seeds. Higher-quality California rolls are garnished with tiny red fish eggs. You can pour a teaspoon or two of soy sauce into the little dish they provide, and add about an eighth of a teaspoon of the green wasabi that comes with the sushi. It's hot stuff! Hold the entire piece of sushi with your chopsticks, dip a corner of it into the soy sauce, and pop the whole thing into your mouth. Eat a piece of the pink ginger with each piece of sushi too. There are also vegetarian selections such as plain cucumber. Later on you can progress to rolls containing raw fish – tuna and salmon are pretty good. If you're out with other people, perhaps you could make a deal to trade one piece of your California sushi for one piece of their more exotic kind. I also enjoy miso soup and green salad with ginger dressing. My husband likes edamame – green soybeans cooked in their pods. You squeeze a pod to pop the beans right into your mouth.

The first time I ate sushi was in the Bahamas. We had an all-inclusive deal on our hotel, so when I ordered the sushi it didn't cost me anything extra to try it. It was eel sushi. It wasn't bad, especially considering I don't like most seafood (except shrimp and crab legs). I was the only one in my group that liked it.

I love a crunchy roll. No raw stuff, but the shrimp and the outside of the roll has tempura batter on it. Also a San Diego Roll. Tempura asaragus & cream cheese.

Why no raw fish? Have you ever tried it?

Get rolls with shell fish - like crab or shrimp - that's cooked.

This website has a good recipe for California Rolls. If you want to stay away from raw fish (which when your ready is absolutely delicious) you want to stay away from Shashimi (which is raw fish).
