I guess that depends on what you are making, but the meltiest cheese is probably the best for consistency reasons. If you are making fried cheese sticks, I would go with mozzarella.

frying? What kind of frying?
For breaded cheese sticks, any semi-soft cheese will do Mozzarella, cheddar, swiss, jack... etc.
You can also take a hard cheese like shredded parmesean and a little portion in the non-stick frying pan. It will make thin crispy crepe. You can actually form a little cup with the thin cheese crepe by draping the warm cheese over a small bowl. When the cheese cools, it will keep the shape of the bowl.

I love fried mozzarella, but I also love baking fresh shaved parmesan. All you do is sprinkle the parm into little mounds on an ungreased cookie sheet, sprinkle some of your favorite herbs on top (fresh is best but dried work well, too), and pop them in the oven at 350 degrees for about 5 minutes. And you have delicious parmesan crisps! Great with salad or just on their own. Be warned though that cooking parmesan can be quite stinky and the odor remains for a bit after you're done. But it's worth it! Enjoy!

Frying what pls since certain cheese like Mozzarella might be fine but also Parmesan but it really depends how and for which dish. Guess that you think more about gratinate something in the oven...

Parmesen if you're actually frying the cheese.
Mozarella is OK but less flavour.
I also like Tasty Cheddar with a good sprinkle of paprika.

I'd say Mozzarella. It's not too melty and runny like cheddar cheese, yet it'll become chewy and stringy when fried (or heated in any way). I love love love fried Mozzarella.

Hello Kiwi: Velveeta wont burn like other cheeses, cook slow and you will find that cooking with a little milk butter and cheese works fine,,
