Depends on how much use it gets,the best method of disposal is to put it in a gallon plastic/metal container,then take it to your local council recycling site.

I save jars and put my old cooking oil in them and dispose of it.
Cooking oil can be used a number of times until it needs changing, you will know by the colour and aroma thats it's seen better days.

Just put it in an empty jar close the lid and put the jar in the trash, you can usually leave cooking oil in the pan for a day or so.

If it's just a cooking pan, then I let it congeal in a bowl and then scrape it into the trash. But for the fryer oil we pour it into a coffee can with a lid and dump the whole thing in the trash.

save an empty milk carton or bottle of water and pour it in there. when the container that the oil came in is empty start using that. it will hold a lot. by the time that's full i usually have another empty one.
when i make french fries i pour that oil in an empty oil container and use it 3 times. after the 3rd time it becomes the container for old oil until it's full.

Change it when it turns brown or has two many bits to seive out.
We dump ours in one corner of our un loved garden. One day we'll be drilling for oil there!

As many have suggested, put it on a covered container and toss it into the trash.
Running it down the sink or putting it in the toilet is very bad for the sewer system.

i pour it down the sink and run the hot tap. change it when it gets brown and your chips are too dark when they are cooked. or you could put it a large glass jar and seal it.

I pour mine down the toilet and flush thats usually the quickest way but make sure you've strained it first you can do this again over the toilet and then throw the bits into your bin and there you go done dusted and busted!
