I can't really give you a good answer unless you give some idea of what areas of electrical engineering interest you.

For example, I'm a controls guy. If I was in your shoes, I'd do a project on building a digital control system to control some device. But if you're a fields guy, that might not be appropriate for you.

Try a switching power supply.. something "neat" like a ZVS (zero volt switching) supply

Build a tesla Coil and make lightning bolts.
