Everybody has it backwards : The knife isn't at angle, the carrot is.
Place the carrot on a cutting board at a 45 degree angle relative to the bottom of the board.
Cut the carrot with the knife blade perpendicular to the bottom of the board.
Result : Regardless of how many pounds of carrots need to be cut, they will all be cut at the exact same angle
